With tender steak, baby potatoes, and sweet corn all slow-cooked in one pot, this recipe checks all the boxes: easy, filling, and absolutely crave-worthy.

Easy garlic butter steak bites (and why they are irresistible)

These Garlic Butter Steak Bites taste like a splurge—but they’re actually what I call “fancy on a budget!” 

Back when money was tight, I still wanted to make meals that felt special. Something warm and satisfying that didn’t come out of a drive-thru bag. Steakhouse prices? Not happening. But with a pack of stew meat, a handful of pantry staples, and a slow cooker, I could serve up something that felt indulgent… without the credit card guilt.

Slow-cooked in a rich garlic butter sauce, these steak bites come out unbelievably tender and flavorful. Serve them over mashed potatoes, tuck them into sliders, or just grab a fork and dive in. It’s comfort food that feels a little fancy—even when the budget says otherwise.

Ingredients

Simple, everyday ingredients make this recipe a go-to for weeknights. Here’s what you’ll need:

  • Sirloin steak - though you can also use round steak, or sirloin tips
  • Montreal seasoning - this brings the flavor, filled with garlic, pepper, salt, etc. It's the perfect seasoning for the meat.
  • Beef broth
  • baby potatoes and corn on the cob
  • butter
  • Garlic cloves - you could also use premade minced garlic.

Crockpot Garlic Butter Steak Bites

This family-friendly steak bites are juicy, flavorful, and melt-in-your-mouth tender! Cooked low and slow with potatoes and corn, this easy recipe makes a complete one-pot meal.

Equipment

  • Crockpot

Ingredients

  • 2 ½-3 pounds sirloin steak
  • 1 tablespoon Montreal seasoning
  • ½ cup beef broth
  • 1 ½ pounds baby potatoes
  • 4 ears corn on the cob
  • 6 tablespoon butter cut into slices
  • 6 cloves garlic minced

Instructions

  • Spray the crockpot with nonstick cooking spray.
  • Dice the steak into 2 inches pieces. Sprinkle with seasoning. Add to crockpot.

  • Scrub the potatoes, slice each ear of corn into 2 or 3 pieces. Place on top of the steak.

  • Sprinkle the minced garlic over the top of the steak and vegetables. Finish by topping with the sliced butter. Place the lid on the crockpot, seal and cook for 5-6 hours on low or 3-4 on high.

  • Remove from the crockpot and garnish with minced parsley. Serve and enjoy!

Notes

Keep an eye on it if you're cooking on high. They can overcook and fall apart depending on your crockpot. I found 5 hours on low was spot on when using top sirloin. They were tender and flavorful!

Storage

Any leftover steak bites can be stored in an airtight container in the refrigerator for up to 3-4 days. To freeze, allow it to cool completely before transferring it into freezer-safe containers or bags. It will keep well for up to 3 months. When ready to reheat, thaw overnight in the fridge.
To reheat, cook in a covered pot on the stovetop over medium heat until warmed through. You can also microwave it in 30-second intervals, stirring in between, until heated to your desired temperature.

    Is stew meat the same as steak bites?

    No, stew meat and steak bites are not precisely the same. While both are bite-sized cuts of beef, stew meat typically comes from tougher cuts like chuck or round that require slow cooking to tenderize. Steak bites, on the other hand, are usually cut from more tender cuts like sirloin, round steak, or ribeye.

    What is the best steak for steak bites?

    I've found that sirloin works great, as it's a lower-priced option and still turns out perfectly tender in the slow cooker.

    Deb’s tips

    I’ve tested this with both ribeye and sirloin—sirloin’s my go-to because it holds up beautifully in the slow cooker without breaking the budget!

    • Don’t skip the butter—it’s not called “garlic butter steak bites” for nothing!
    • Dice your steak pieces into similar sizes so that they all cook evenly.
    • Want to make cleanup easier? Use a slow cooker liner, or spray your vessel well with nonstick cooking spray before adding your ingredients.
    • For extra flavor, try searing the steak bites in a hot skillet before adding them to the crockpot. This step locks in juices and creates a rich, caramelized crust.

    Variations

    • If corn isn't your favorite, feel free to substitute it with baby carrots, or green beans. They all pair beautifully with the steak bites.
    • Want it saucier? Stir in a cornstarch slurry at the end and let it bubble on high for 10–15 minutes to thicken into a rich, savory gravy. Because who doesn’t love steak with gravy? 😋
    • Fresh thyme or rosemary can bring an aromatic and herby flavor to your steak bites. Sprinkle a few sprigs over the top before cooking.

    Repurpose

    Turn your leftover steak into a different meal by creating a bowl with a base of mashed potatoes, rice, or quinoa. Top it with steak bites, roasted vegetables, and a drizzle of gravy or a creamy sauce.

    I've also sauteed carrots, celery and onions, then added the leftovers to a pot, topped with beef broth and you've got a great stew on day two!
