Crock Pot Corned Beef Brisket is the perfect dinner for busy families, it's a one-pot dish that takes just minutes of prep time and can be left to simmer all day. The end result is an incredibly juicy, tender and flavorful corned beef brisket that'll leave your mouth watering.

  • yellow onion
  • corned beef brisket (with spice packet and brine)
  • red potatoes
  • carrots
  • salt and pepper
  • head of cabbage
  • fresh parsley

Instructions

  1. Lay the onion slices on the bottom to create an ‘onion bed’.
  2. Place corned beef brisket on the top of the onions with the fat side up and season
  3. Arrange the potatoes and carrots around the outside of the corned beef and then season with salt and pepper.
  4. Pour in the water and reserved brine.
  5. Cover and cook on low for 6 hours.
  6. Add the cabbage sections on top of the entire dish, then cover again and cook for an additional 2 hours.

FAQ's

Does corned beef go in crockpot fat side up or down?

I recommend cooking with the fat cap up, as it will add moisture and fat to your beef while it cooks to keep it tender.

Can you overcook corned beef in a crockpot?

Yes, so make sure that don't allow the beef to cook more than the time listed for the recipe.

Is corned beef better boiled or crock pot?

I prefer it in the crock pot, because slow cooking always gives tender and juicy beef.

Deb's tips

  • Make sure that you grease your slow cooker or spray it well with nonstick cooking spray.
  • Cut your potatoes and carrots into similar-sized pieces so that they cook evenly.
  • Garnish with fresh parsley with a nice pop of color.
  • Use a meat thermometer to make sure that the internal temperature reaches
  • If you are in a hurry, you can cook this on high heat for 5 hours, but it's really best on low heat.

Variations

  • If you want to add more flavor to the cooking liquid, add a bay leaf, mustard seeds, dill seed, or even some Guinness beer instead of water.
  • You can place some garlic cloves on top of the vegetables if you like a garlic flavor in your main courses.
  • If you are not a fan of cabbage you can leave the cabbage wedges out of this traditional meal.

Storage

Refrigerate - Leftover corned beef should be stored in the fridge in an airtight container for 3-4 days.

Freezer - The cooked corned beef can be frozen, however I don't recommend freezing the vegetables as they won't thaw well.

Reheat - Reheat leftovers in the microwave for 1-2 minutes or until warm all the way through.

Ingredients

  • 1 large yellow onion sliced
  • 3-4 pound flat corned beef brisket (with seasoning packet and brine)
  • 5 large red potatoes peeled and cut into 2” pieces
  • 4 large carrots peeled and cut into 2” pieces
  • salt and pepper to taste
  • 1 head cabbage outside leaves removed, cut into 6 sections
  • 1-½ cups water
  • ¼ cup chopped fresh parsley

  • Spray a 6 quart (or larger) crock pot with cooking spray.
  • Lay the onion slices on the bottom to create an ‘onion bed’.
  • Lay the corned beef brisket on the top of the onions with the fat side up.
