CPK Chicken Piccata is one of my favorite menu items at California Pizza Kitchen. It has a delicious, grilled chicken with a lemon and caper sauce. This finger-licking dish is a staple dinner in our home.

Instructions

- Preheat oven to 350°. Prepare 9x13 casserole dish by spraying with non-stick cooking spray, set aside.
- Cut chicken breasts in half crosswise. Place chicken between two sheets of plastic wrap. Pound with a meat mallet to ½-in. thickness.
- Place flour on a plate.
- Season chicken breasts with salt and pepper, dredge in flour.
- Place a large skillet over medium-high heat. Brown chicken on both sides in batches, adding additional oil as needed. Transfer chicken to the baking dish.
- Add stock, capers, and lemon juice to the pan, scrape the bottom to loosen browned bits from the pan.
- Whisk in butter, 1 tablespoon at a time, until creamy. Pour buttery lemon sauce over chicken. Bake 5-10 minutes or until no longer pink.

Tips
- Use the meat mallet or a wooden rolling pin to get your chicken breasts nice and thin so that they cook evenly.
- Don't be afraid to brown your chicken! The flavorful bits from the pan will add great flavor to the sauce.
- If you want a thicker sauce, mix a little flour with a small amount of water and slowly add the slurry to your sauce while it's simmer to cook it.
- The sauce does thicken as it cools, so if you need to thin your sauce out, just add a little milk or chicken stock.
- A splash of white wine in the sauce will add depth to the sauce!

- Add a little lemon zest for some extra tangy flavor!
- Get creative with the sauce fresh herbs, or sun-dried tomatoes to suit your taste buds.
- If you like a spicy dish, you can add some crushed red pepper flakes to your sauce while it simmers for a little heat.
- Cremini mushrooms would be amazing with this dish! Add them right to the casserole dish while the chicken bakes.
Storage
Refrigerator - Store in an airtight container for up to 3 days in the fridge.
Freezer - although you can freeze this, the texture of the chicken changes, it's best enjoyed fresh.

CPK Chicken Piccata
Ingredients
- 3-4 boneless skinless chicken breasts
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup all-purpose flour
- 3 tablespoons olive oil
- 1 cup chicken stock
- 3 to 4 tablespoons capers drained
- 2 to 3 tablespoons lemon juice
- 3 tablespoons butter
- optional garnishes - minced fresh Italian parsley and lemon slices.
Instructions
- Preheat oven to 350°. Prepare 9x13 casserole dish by spraying with non-stick cooking spray, set aside.
- Cut chicken breasts in half crosswise. Place chicken breasts between two sheets of heavy-duty plastic wrap. Pound with a meat mallet to ½-in. thickness.
- Season chicken breasts with salt and pepper, dredge chicken in flour.
- Place heavy non-stick pan over medium-high heat. Add oil. Brown chicken to golden brown on both sides. Don't crowd the pan, brown in batches, adding additional oil as needed. Place pieces of chicken to the baking dish. It will finish cooking in the oven.
- Add stock, capers and lemon juice to pan, scrape bottom of the pan to loosen browned bits. Whisk in butter, 1 tablespoon at a time, until creamy. Pour sauce over chicken. Bake 5-10 minutes or until no longer pink.
- Garnish with minced parsley and sliced lemon.
