Chicken Bog Casserole is Southern comfort food at its coziest. It'ssimple, savory, and soul-warming. This baked twist on the classic South Carolina dish takes everything you love about traditional chicken bog (chicken, rice, sausage, and seasoning) and layers it into an easy, cheesy casserole. It's hearty enough to feed a crowd!

It's one of those meals that feels like a warm hug at the end of a long day.

This casserole hits all the high notes with tender chicken, fluffy rice, smoky sausage, and a creamy base-tied together with melty cheddar cheese and a generous shake of Montreal steak seasoning.

Equipment

  • 1 9x13 casserole dish

Ingredients

  • 3-4 cups cooked chicken
  • 1 tablespoon butter
  • 1 small onion finely diced
  • 1 rib celery finely diced
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth
  • 10.5 ounce can cream of chicken soup
  • 2 cup shredded cheddar cheese divided
  • 1½ teaspoons Montreal steak seasoning
  • 1 cup smoked sausage, sliced I used Hillshire Farm brand.

Instructions

  • Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
  • In a skillet over medium heat, melt butter. Add diced onion, celery and sliced sausage. Cook for 5-7 minutes or until softened and the sausage is lightly browned.

  • In a large bowl, combine cooked veggies, chicken, uncooked rice, broth, cream of chicken soup, 1 ½ cups of the shredded cheese, Montreal steak seasoning, and sausage. Stir until everything is well combined.

  • Spoon into the prepared baking dish and spread evenly. Top with the remaining cheese. Cover tightly with heavy duty aluminum foil.

  • Bake for 60-70 minutes, or until the rice is tender and most of the liquid is absorbed.
  • Remove from the oven and let it rest covered for 10 minutes before serving. After resting, place under the broiler for 2-3 minutes to brown the top of the casserole. Sprinkle with parsley if desired.

    Rotisserie chicken works beautifully, but any cooked, shredded or chopped chicken will do. This is a great way to use up leftovers!
