- 1 9x13 casserole dish
Ingredients
- 3-4 cups cooked chicken
- 1 tablespoon butter
- 1 small onion finely diced
- 1 rib celery finely diced
- 1 cup long-grain white rice uncooked
- 2 cups chicken broth
- 10.5 ounce can cream of chicken soup
- 2 cup shredded cheddar cheese divided
- 1½ teaspoons Montreal steak seasoning
- 1 cup smoked sausage, sliced I used Hillshire Farm brand.
Instructions
- Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
- In a skillet over medium heat, melt butter. Add diced onion, celery and sliced sausage. Cook for 5–7 minutes or until softened and the sausage is lightly browned.
- In a large bowl, combine cooked veggies, chicken, uncooked rice, broth, cream of chicken soup, 1 ½ cups of the shredded cheese, Montreal steak seasoning, and sausage. Stir until everything is well combined.
- Spoon into the prepared baking dish and spread evenly. Top with the remaining cheese. Cover tightly with heavy duty aluminum foil.
- Bake for 60–70 minutes, or until the rice is tender and most of the liquid is absorbed.
- Remove from the oven and let it rest covered for 10 minutes before serving. After resting, place under the broiler for 2-3 minutes to brown the top of the casserole. Sprinkle with parsley if desired.
