Instructions
Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
In a skillet over medium heat, melt butter. Add diced onion, celery and sliced sausage. Cook for 5–7 minutes or until softened and the sausage is lightly browned.
In a large bowl, combine cooked veggies, chicken, uncooked rice, broth, cream of chicken soup, 1 ½ cups of the shredded cheese, Montreal steak seasoning, and sausage. Stir until everything is well combined.
Spoon into the prepared baking dish and spread evenly. Top with the remaining cheese. Cover tightly with heavy duty aluminum foil.
Bake for 60–70 minutes, or until the rice is tender and most of the liquid is absorbed.
Remove from the oven and let it rest covered for 10 minutes before serving. After resting, place under the broiler for 2-3 minutes to brown the top of the casserole. Sprinkle with parsley if desired.
