Asian Inspired Fried Rice
My brother stopped by last week. He’s got the coolest grill. Well actually it’s a smoker, the brand name is Traeger. Super cool grill.
He’s had fun making tri-tip, chicken, burgers, ribs – you name it!
He’s gotten good at it and when we are really lucky….he will bring us some…like last week when he came for a visit! He called to say he had smoked tri-tip and chicken in the cooler and he was headed south. Oh….and he said he was in the mood for Thai Food!
I do love all things Asian, like this Noodley Thai Bowl inspired from our trip to Hawaii. Oh my gosh, so good! But this time I would be working with smoked tri-tip and chicken. Time to put my thinking cap on….for the beef I cheated and used a couple of store bought sauces. You know what’s it’s like – you look in the fridge and have just one third of everything…so it can’t be recreated the same way twice….but it was great!
Broccoli, cauliflower, onions, mushrooms, cabbage, red pepper, bamboo shoots and water chestnuts – with the beef sliced really thin. It was marvelous! Dusted some peanuts and cilantro on top, yum!!!
Then it was time to work on the chicken. I decided the chicken would become fried rice, since I had some leftover cooked rice. I started by shredding the chicken and put it in a teriyaki sauce to marinate. Then I peeled and diced a couple carrots, and minced some garlic. I put the wok over high heat, sautéed the carrots for a minute or two, added the garlic and then the rice, stirring really well. I pushed the rice & veggies to the side of the wok and made a well in the middle – cracked a couple of eggs and stir fried them quickly too. Next some soy sauce and sesame oil and then the chicken along with the teriyaki sauce. That’s it! Mixed it up really well and came away with the most delicious fried rice I’ve ever made!
I think all these years when I’ve tried to make fried rice, I’ve made it too complicated. Sometimes….well most times…simple is best! 🙂 You want to give this a try yourself? Click on the link below for the recipe!
