Impossible Taco Pie is a delicious twist on the classic taco night, made with taco-seasoned ground beef, cheddar cheese, green chilies, and Bisquick mix. This easy recipe is perfect for busy cooks looking for an easy weeknight meal that the whole family will love.

  • lean ground beef
  • onion
  • envelope taco seasoning mix
  • green chilis
  • milk
  • eggs
  • Bisquick
  • pepper Jack cheese
  • optional toppings; salsa, sour cream, shredded lettuce, olives, diced tomatoes

  1. Preheat the oven to 400°F. Spray a 9-inch pie plate with non-stick cooking spray, set aside.
  2. Cook ground beef and onion in a skillet over medium heat. Crumble well, drain any grease. Stir in seasoning mix and drained green chiles.
  3. Spoon into pie plate. Using a spoon or spatula spread into an even layer.
  4. In a medium mixing bowl, add bisquick, eggs and milk. Whisk until blended. Pour the egg mixture over the meat.
  5. Bake in the preheated oven for 25 minutes or until a knife inserted in the center comes out clean. Top with cheese, return to the oven for 8 to 10 minutes longer.

FAQ's

Why is it called impossible pie? 

The name comes from the fact that you don't need to make your own crust, it forms on its own while baking.

How can I tell when this easy taco pie is done? 

Insert a toothpick into the center and if it comes out clean, it's done! You can also gently shake the pie and if it doesn't jiggle, it's done.

Can I prep this ahead of time? 

Yes, assemble your pie ahead of time, cover it with plastic wrap or aluminum foil, and place it in the fridge for up to 24 hours. Then remove it, uncover and bake as directed.

Test kitchen tips

  • I've found this this taco casserole turns out best when you use a glass or ceramic pie plate. You can use a deep dish pie plate or a regular pie dish, whichever you have on hand is just fine. 
  • Make sure that you cook the ground beef until is no longer pink, and then drain off the excess grease before you add the taco seasoning. 
  • Top your slice of pie with your favorite taco toppings, sour cream, green onions, or a little salsa will work great on top of this dish. 

Variations

  • You can make this savory pie a little healthier by swapping out the beef taco meat, for ground turkey or ground chicken. 
  • Not a fan of pepperjack cheese? Swap it out for cheddar cheese, Monterey jack, or Mexican blend cheese. Use your favorite it will turn out just fine! 
  • Want to add a little extra spice to this delicious comfort food? Add a dash or two of hot sauce to your ground beef mixture. 
  • Beef up this casserole dish a little by adding a can of drained black beans, black olives, or even some taco sauce to the meat mixture. 
  • Need to make it gluten-free use gluten-free bisquick to meet your needs. 

Storage

Refrigerate - Store leftovers in an airtight container in the fridge for up to three days. 

Freezer - Wrap tightly in saran wrap and freeze for up to 3 months. Thaw it in the fridge overnight before reheating -

Reheat -  You can reheat this taco pie in the oven or the microwave. Cover and bake in a 350°F oven for about 15 - 20 minutes. Or heat individual slices in the microwave for 1-2 minutes until heated through.

  • 4.5 ounces can chopped green chiles, well drained
  • 1 cup milk, I used 2%
  • 2 eggs
  • ½ cup Bisquick
  • 1 cup shredded pepper Jack cheese
  • optional toppings; salsa, sour cream, shredded lettuce, olives, diced tomatoes

  • Pre heat the oven to 400°F. Spray a 9-inch pie plate with non-stick cooking spray, set aside.
  • Brown ground beef and onion in a skillet over medium heat. Crumble well, drain any grease. Stir in seasoning mix and drained green chiles.
  • Spoon into pie plate. Using a spoon or spatula spread into an even layer.
  • In a medium mixing bowl, add bisquick, eggs and milk. Whisk until blended. Stir in half the shredded cheese. Pour over the meat mixture. Top with the remaining cheese.
  • Bake in the preheated oven for 30-35 minutes or until knife inserted in center comes out clean.
  • Cool 5 minutes. Run a knife around the outer edges of the pie plate before slicing. Top with your favorite taco fixings, enjoy!

    I am so excited to try this Bisquick taco pie! I have ground turkey in the refrigerator at the moment so I think I'm going to use that in place of the beef. It should be just as tasty!

    YUM! I want to try making a vegetarian/ gluten free version of your impossible taco pie recipe! Do you think that it will still taste okay if I use the gluten free Bisquick mix and Impossible Burger meat (vegan meat)? I am excited to try it!

    You know, I never would've though to use Bisquick for a Mexican food recipe, but now that I have seen this impossible taco pie, I am CRAVING it, haha! What a brilliant idea! I also love that I can come home from work, toss it all together, and then throw it in the oven while I unwind, and it's on the table in less than an hour!

      Made this today perfect my husband's request. The pie dish was a bit smaller for this, thinking a 9x13 will keep boil overs away better. I substituted drained rotel for the green chilies. We topped it with homemade leftover ranch dip, black olives, diced tomatoes,l, diced onions, and salsa. Omg, yum!!! Another great easy and family friendly recipe!
