Things to know

  • It's important you dry the slices of ham and whole dill pickles with a paper towel before assembling the roll-ups. This will help keep them from becoming soggy.
  • When it comes to the size of the pickle I use the large pickles, not the smaller size.
  • The cream cheese should be spread in a thin layer on the ham slices, otherwise, you risk them becoming too cheesy and heavy.
  • The cream cheese should also serve as the "glue" to hold the roll-ups together. However, if you find that they are opening, you can use toothpicks to hold them together instead.
  • I like to serve ranch dressing for dipping with these pickle rollups.
  • I prefer to use sour dill pickles, but you could also use sweet pickles if you prefer.
  • You can use any kind of ham, however, I prefer to use black forest ham but you could also use honey ham.

Variations

  • Substitute smoked salmon for the ham.
  • Replace the cream cheese with flavored cream cheese such as garlic and herb or chive and onion.
  • Swap out the pickles for olives or jalapenos.
  • Add some chopped green onion, fresh dill, diced tomatoes, or ranch seasoning to the cream cheese for a flavor and color boost.
  • Sprinkle with paprika or crushed red pepper flakes to the cream cheese mixture or a little heat.
  • You can also use other cold cuts such as roast beef, turkey, or salami instead of ham.

Storage

Refrigerate - Place the pickle roll-ups in an airtight container and store them in the refrigerator. They will stay fresh and are best enjoyed within 24 hours.
