Easy strawberry shortcake is a simple dessert you'll enjoy all through the summer months. It takes 10 minutes from start to finish. (When you take this great shortcut!)

Easy strawberry shortcake
You guys know strawberries are totally my jam, right? They are my favorite fruit even though as a kid, I picked strawberries to earn money. That's how I bought my piano and my first car!
Still.... I've never met a strawberry recipe I didn't like.
This recipe is the laziest of strawberry shortcake recipes. BUT it's the only way I serve strawberry shortcake! It was a shortcut my Mom taught me. And since then, I've found it the best way to make a quick and easy no-bake dessert.

- Cornbread - Yes, golden, slightly sweet cornbread makes the perfect shortcut and it makes perfect shortcake! Want to know another secret? (Picture me whispering!!) I use store-bought cornbread and whipped cream.
- fresh strawberries
- Cool Whip, Reddi-Whip or homemade whipped cream
Instructions

- Clean the fresh berries, remove the stems and thinly slice.
- Place the sliced strawberries in a medium bowl and sprinkle with sugar.
- Mix well and refrigerate for an hour.
- Slice the cornbread in half, top with strawberries and whipped topping.
- Repeat layers and finish with whipped cream.
This is how Mom makes strawberry shortcake, so yes.... you could call me lazy, BUT I'm handing down a tried and true family recipe! 😉
How to choose good strawberries
Buy local if possible. If the strawberries are shipped in, they will be several days old before you see them in the stores. Visit your local farmers market and choose fruit that is in season. Organic strawberries may not be uniform in size or shape but they will have better flavor.
Choose berries that are deep red in color. Color equals flavor. Unlike other fruit strawberries do not continue to ripen after being picked. If a berry is moldy discard it.
Storage
If you have leftovers, store strawberries in an airtight container in the refrigerator 2-3 days.
Leftover cornbread should be wrapped well in plastic wrap or aluminum foil. Make sure it's completely sealed or it will try out.

Easy Strawberry Shortcake
Ingredients
- 1 cup strawberries cleaned and sliced
- 2 tablespoons sugar
- 2 servings cornbread
- whipped topping
Instructions
- Clean the berries, remove the stems and thinly slice the berries.
- Add the berries to a bowl. Top with sugar, mash the berries together.
- Slice the cornbread in half, top with strawberries and whipped topping. Add a second layer and repeat with berries and whipped topping.
