Layer Doritos Casserole
I love it because it's super easy casserole recipe. Think your favorite taco ingredients combined into a great one-pot! It's family friendly, budget-friendly and just plain good! Even your picky eaters will line up for seconds!
Ingredients/variations
Please refer to the printable recipe card at the bottom of this post for the exact measurements.
- olive oil
- Lean ground beef, ground turkey meat or ground chicken.
- yellow onion
- a packet of taco seasoning or use this recipe for homemade taco seasoning.
- fire roasted tomatoes
- I used light red kidney beans but black beans or pinto beans can be substituted.
- Rotel tomatoes or diced tomatoes and chilies
- sour cream
- sharp cheddar cheese, Monterey Jack cheese or a pre shredded Mexican cheese blend.
- Nacho Cheese Doritos Chips or Cool Ranch Doritos - use your favorite!
- Shredded lettuce, salsa, sliced olives or cilantro for garnish. Use all your favorite taco toppings!
Adding cream of chicken soup, cream of mushroom soup, or nacho cheese soup makes this even creamier!
Frozen corn or canned corn (drained), green chiles or diced bell peppers are a great addition to the casserole dish.

This easy Dorito Casserole can be easily reheated in the microwave. If you want the topping to get crunchy again, then reheat in the oven or air fryer in an oven safe dish.
Covering the casserole with aluminum foil will help hold in the moisture and help keep this hearty casserole moist.
No, you can use whatever flavor of corn chips you prefer. By all means, mix it up!
Top Tip
Crushing the chips is easy when you leave them in the bag. You can crush by squeezing or using a rolling pin. Just don't crush them too small, you want texture, not dust.
- Using pre-shredded cheese makes this casserole that much easier to make. The cheese will melt just fine.
Storage
Refrigerate - Allow to cool completely, cover well or place in an airtight container. Refrigerate up to three days.
Freezer - This freezes well. You may want to add a little extra cheese when you reheat it. Freeze up to three months.
Reheat - Thaw overnight in the refrigerator. I prefer to reheat in the oven, though you can certainly reheat in the microwave, but it won't get crispy.

Ground Beef Doritos Casserole Recipe
Ingredients
- 2 teaspoons olive oil
- 1 pound ground beef
- ½ small yellow onion diced
- 1 ounce packet taco seasoning
- 15 ounce can fire roasted tomatoes
- 15 ounce can light red kidney beans
- 1 cup sour cream
- 10 ounce can diced tomatoes and chilies (Rotel)
- 2 ½ cups shredded sharp cheddar cheese
- 5 cups Nacho Cheese Doritos tortilla chips crushed
- Optional garnish: cilantro, green onions, black olives, etc. Use your favorite taco toppings! optional
Instructions
- Pre-heat the oven to 375°F.
- Add the olive oil to a large skillet and heat up over medium-high heat. Add the ground beef and cook until no pink remains.
- Add the diced onions and cook until soft, about 5 minutes.
- Add the taco seasoning, fire roasted tomatoes, tomatoes and chilies and beans and heat through.
- Add the sour cream and turn off the heat. Stir until well combined.
- Lightly spray a 9 x 13” Casserole dish with cooking spray then take 2 cups of the Doritos and evenly line the bottom of the dish.
- Spoon half of the meat mixture over the top of the Doritos then sprinkle with 1 cup of cheese.
- Repeat with another layer of the same.
- Finish with a light layer of Doritos that are not quite as crushed. Big chunks.
- Then just a ½ cup sprinkle of cheese.
- Cover with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for a further 5-10 minutes, until lightly brown on top.
- Sprinkle with a little chopped cilantro then Serve with your favorite toppings (sour cream, cilantro, chopped tomatoes, lime, avocado etc)
