I still remember those rushed mornings trying to plan ahead before heading out the door. This recipe for crockpot honey garlic chicken is one of my go-meals that works it's magic every time.

A meal that not only saved my (and your!) hectic nights but will remind us both how a few simple ingredients can transform an ordinary evening into a comforting, flavorful dinner!

This recipe is designed for busy days when you need a comforting meal without the fuss-slow-cooked so that each tender piece of shredded chicken is infused with a perfectly balanced blend of sweet, tangy, and savory notes.

#1 Whisk together the sauce ingredients.

Frequently asked questions (FAQ's)

How do I thicken the sauce?

Remove the cooked chicken from the sauce. Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir this slurry into the sauce in the crockpot, then cook on high for 10-15 minutes until the sauce thickens. Return the shredded chicken to allow it to soak up the sauce.

Can I make this dish ahead of time?

Absolutely! Prepare the sauce and store it separately in the fridge for up to 2 days. Add it to the crockpot with the chicken when ready to cook. You can also fully cook the dish in advance and reheat it when needed.

Can I use frozen chicken breasts?

No, I don't recommend it. The potential food safety concerns outweighs the convenience. Thaw the chicken breast first.

Tips for honey garlic chicken

This recipe is so simple! The best tip is to cook chicken on low. The texture is so much better. It tends to get stringy when it's cooked on high.

Creative variations to try

  1. Pineapple Twist - Mix in ½ cup of pineapple chunks or pineapple juice for a tropical flavor profile.
  2. Ginger Garlic Chicken - Incorporate 1 teaspoon of freshly grated ginger to enhance the Asian-inspired flavors.
  3. Vegetable Additions - Toss in baby carrots, broccoli florets, or snap peas during the last hour of cooking for a complete one-pot meal!

How to store leftovers

Refrigerate - Store leftovers in an airtight container in the refrigerator for up to 3-4 days.

Freezer - Portion the chicken and sauce into freezer-safe containers and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

Reheat - Reheat in the microwave or on the stovetop until warmed through. Add a splash of water or broth if the sauce has thickened too much.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • ⅓ cup soy sauce
  • 1 tablespoon garlic powder
  • 2 tablespoons honey
  • 2 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro

Instructions

  • Place the chicken breasts into the crockpot. Lightly season both sides with salt and pepper.
  • In a small mixing bowl, whisk together the soy sauce, garlic powder, honey, and lime juice until well combined.
  • Pour the sauce over the chicken breasts in the crockpot, ensuring they're well coated.
  • Cover the crockpot with the lid and cook on low for 4-5 hours or high for 2-3 hours. The chicken is ready when it reaches an internal temperature of 165°F and is tender enough to shred.
  • For a pulled chicken style, use two forks to shred the chicken and return it to the sauce for at least 30 minutes. This allows it to soak up even more of the flavorful sauce.
  • Sprinkle fresh cilantro on top. Serve immediately with your favorite sides.
