  • hot or mild Italian sausage
  • refrigerated biscuit dough, I used Pillsbury Grands Jr. Biscuits.
  • jarred marinara sauce or your favorite jar pizza sauce, in a pinch I've even used tomato sauce.
  • sliced pepperoni
  • mozzarella cheese

  1. Preheat the oven to 375 degrees, spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large skillet, crumble and brown the sausage. Remove and drain on paper towel to remove grease.
  3. Cut each biscuit into eight pieces.
  4. In a large mixing bowl, combine marinara with cut-up biscuits. Add the cooked sausage, stir to combine.
  5. Spread the mixture into prepared baking dish.
  6. Top with shredded mozzarella cheese and sliced pepperoni.
  7. Bake uncovered for about 25-30 minutes or until biscuits are cooked through and edges are nicely golden brown.

What is a bubble-up casserole?

A bubble-up casserole is a type of casserole that is made with biscuits, sauce, and cheese. It gets its name from the way the biscuits bubble up during the baking process.

What temperature do you cook bubble pizza at?

Bubble pizza should be cooked at 375 degrees. If your oven runs hot, you can turn it down to 350 degrees.

Things to know

  • Be sure to spray your baking dish well with cooking spray so that your biscuit pieces do not stick to the bottom of the dish.
  • Pizza sauce is a good substitute for marinara sauce, but spaghetti sauce will also work in a pinch.
  • Use the small biscuits for the recipe, not the larger ones. For some reason, the small biscuits just rise better in this bubble-up pizza recipe.
  • If you want a little extra flavor, add garlic powder and Italian sausage to the sausage as it browns.
  • This recipe is easily doubled for a larger crowd. Just use two baking dishes.
  • For a meatless version, leave out the sausage and add extra pepperoni or black olives.
  • Be sure to drain the grease off your Italian sausage so that your pizza bake is not too greasy.

Variations

  • For a meatless version, leave out the sausage and pepperoni and add your favorite vegetable toppings.
  • Use your favorite pizza toppings. Sneak some veggies into picky eaters by adding black olives, green peppers, onions, sliced tomatoes or even mushrooms to this easy pizza recipe.
  • If you are not a fan of pork or want a lower fat option, you can use turkey sausage and turkey pepperoni.
  • Do you like a little spice to your pizza? Add a dash of red pepper flakes to the sauce or sprinkle on top when it comes out of the oven.
  • Add ground beef instead of sausage. Did you know that you can make ground beef flavored like Italian sausage just by adding a teaspoon or so of poultry seasoning to ground beef while it is browning? Give that a try, it will save you a trip to the store!
  • If you love the flavor of parmesan cheese, sprinkle some freshly grated parm on top before you bake this dish.

Storage

Refrigerate - This dish will keep in the refrigerator for up to 3 days. Be sure to keep it in an airtight container or wrapped tightly with plastic wrap.

Freezer - You can freeze this dish before baking for up to 2 months. Thaw on in the fridge overnight before baking.

Reheat - To reheat, bake in a 350-degree oven for 15-20 minutes or until heated through. You can also reheat in the microwave on 50% power for 1-3 minutes.
