- 3 cups diced chicken
- refrigerated Pillsbury Grands Biscuits
- barbecue sauce
- shredded mozzarella cheese
- shredded gouda cheese
- thinly sliced red onion
- cilantro
Instructions

- Preheat the oven to 375 degrees, spray a 9x13-inch baking dish with nonstick cooking spray, and set aside.
- Dice or shred the chicken.
- Cut each biscuit into eight pieces.
- In a large mixing bowl, combine barbecue sauce with cut-up biscuits. Add the shredded chicken and stir to combine.
- Spread the chicken mixture into the prepared casserole dish.
- Top with shredded mozzarella cheese and shredded gouda cheese. Top with thinly sliced red onions
- Bake uncovered for about 25-30 minutes or until biscuits are cooked, and the edges are golden brown. If the top of the casserole browns too quickly, cover loosely with foil halfway through baking.
- Finish with a sprinkle of cilantro. Serve and enjoy!

I recommend making this casserole uncovered. However, if it starts to brown too much, cover it with aluminum foil to prevent it from further browning.
You can use any cooked chicken you have on hand to make this dish.
Deb's tips
- If you can't find Pillsbury Grands Biscuits, you can use the smaller biscuits, but you will need to use more of them and only cut them into quarters instead of eighths.
- This recipe is the perfect way to use leftover rotisserie chicken, but you can use poached boneless skinless chicken breasts if you don't have some leftover cooked chicken on hand.
- Garnish this casserole with sliced green onions, a sprinkle of fresh parsley, or a dollop of sour cream.
- Make sure you spray your large casserole dish well with nonstick cooking spray or grease it with butter instead. This helps with easy clean-up.
Variations
- You can change up the cheese in this casserole, shredded cheddar cheese, a Mexican blend, or a combination of any of your favorite cheeses.
- If you want to add more flavor to your casserole, add a dash of garlic powder, onion powder, ranch dressing mix, salt, and pepper to the chicken and biscuit mixture.

Storage
Refrigerate - Store leftovers in an airtight container in the fridge for up to three days.
Freezer - You can freeze this bbq chicken casserole for up to two months. Just make sure that it is tightly sealed before freezing.
Reheating - Reheat leftovers in the oven or microwave until heated through. Or, you can reheat them in the oven at 350 degrees for 15-20 minutes or until warm through.
