Bubble Up BBQ Chicken Casserole Recipe

  • 1 9x13 casserole dish

Ingredients

  • 3 cups diced chicken
  • 16.3 ounce can refrigerated Pillsbury Grands Jr. Biscuits
  • 15 ounces barbecue sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded gouda cheese
  • ¼ cup thinly sliced red onions
  • 2 tablespoons cilantro garnish

Instructions

  • Preheat the oven to 375 degrees, spray a 9x13-inch baking dish with nonstick cooking spray, set aside.
  • Dice or shred the chicken.
  • Cut each biscuit into eight pieces.
  • In a large mixing bowl, combine barbecue sauce with the cut-up biscuits. Add the shredded chicken and stir to combine.
  • Spread the mixture into the prepared casserole dish.
  • Top with shredded mozzarella cheese and shredded gouda cheese. Finish with thinly sliced red onions
  • Bake uncovered for about 25-30 minutes or until biscuits are cooked through and edges are nicely golden brown. If the top of the casserole browns too quickly cover loosely with foil halfway through baking.
  • Finish with a sprinkle of cilantro. Serve and enjoy!
