Hamburger Corn Casserole is a hearty and filling casserole. It's filled with tender noodles, hamburger, and corn and coated in a creamy sauce. It's finished with a crispy buttery breadcrumb topping.

- rotini pasta cooked to al dente and drained.
- lean ground beef
- onion diced
- whole kernel corn or fiesta corn, drained
- cream of chicken soup
- cream of mushroom soup
- evaporated milk
- shredded cheddar cheese
- Montreal steak seasoning
- panko bread crumbs
- melted butter
Instructions

- Cook the pasta according to package instructions, drain.
- While the pasta is cooking, preheat the oven to 375 degrees. Spray 9x13 casserole dish with non stick cooking spray. Set aside.
- Place the hamburger and onion in a large skillet over medium-high heat. Brown the ground beef, breaking into crumbles. Cook until no longer pink. Drain any grease, and season with Montreal steak seasoning.
- Add the drained corn, cream soups and evaporated milk to the cooked meat. Stir to combine. Add the noodles and half the cheese. Mix everything together. Spoon the meat mixture into the prepared casserole dish.
- Sprinkle with the remaining cheese.
- In a small bowl, combine the bread crumbs and melted butter. Sprinkle the crumb topping over the top of the casserole. Place in the preheated oven for 25-30 minutes or until hot and bubbly and the top of the casserole is golden brown.
- Remove from oven and allow to sit loosely covered for 10 minutes before serving. Garnish with minced parsley or thinly sliced green onions.

Yes, you can freeze this casserole. Prep it all the way until you get to the baking steps, and then you can cover it tightly and freeze it. When ready to bake, thaw in the refrigerator overnight, then follow the baking instructions as written in the recipe.
Either way is fine. If you are freezing an unbaked casserole, cover it tightly and freeze it. If you’re freezing a baked casserole, let it cool completely first. Then wrap it in plastic wrap or aluminum foil and place it in the freezer.

Storage
Refrigerate - Store leftovers in an airtight container in the fridge for 3-4 days. Cover your casserole dish with plastic wrap and pop it in the fridge.
Freezer - Place the casserole in an airtight container and freeze for up to 3 months. Let it thaw overnight in the fridge before reheating.
Reheat - Reheat your casserole in the oven at 350 degrees for 20-25 minutes or microwave individual servings until warm all the way through.
