Ingredients

  • bonless skinless chicken breasts or thighs
  • pasta sauce
  • A red and green bell pepper - though you can use any color pepper you'd prefer, the rainbow of colors make it look so good!
  • yellow onion
  • zucchini
  • fresh garlic
  • canned mushrooms
  • Italian seasoning mix (the dry packet used for salad dressing).

  1. Prep the crockpot. Spray the slow cooker with non-stick spray. 
  2. Add the chicken to the slow cooker. 
  3. Top with the vegetables. Add the sliced zucchini, bell peppers, mushrooms, and onion. Season with the minced garlic and Italian seasoning.
  4. Pour the pasta sauce over the vegetables and seal the crock pot. Cook for 6 hours on low, 4 hours on high.

What is chicken cacciatore made of?

It's delicious chunks of chicken, often browned then simmered in a rich Italian Italian sauce. It often includes vegetables like zucchini, mushrooms, onions, and bell peppers.

How do you thicken cacciatore sauce?

If you want a thicker sauce, use a cornstarch slurry. Whisk two tablespoons of cornstarch with two tablespoons of cold water. Add the slurry to the crockpot and whisk in. Cook for 30 minutes and the sauce will thicken nicely.

How can I make slow cooker chicken cacciatore even better?

If you have a little more time on your hands, brown the chicken before adding it to the crockpot.

If you have the time to sear the chicken, peppers, and onions it adds a ton of flavor. It will make your dinner that much better.

  • A splash of chianti or good red wine (about a tablespoon or two) will add another layer of flavor. YUM!

How to store leftovers

Refrigerate - Allow the leftovers to cool completely. Store in the refrigerator up to three days.

Freezer - This dish freezes nicely. Store in an airtight container up to three months in the freezer.

Reheat - This reheats nicely in the microwave. Start with one minute increments and heat until hot and bubbly.

Easy Chicken Cacciatore Recipe

This classic Italian dish is rich and delicious and couldn't be easier to make!

Equipment

  • 1 Slow Cooker

Ingredients

  • 3-4 bonless skinless chicken breasts or thighs, sliced into thirds
  • 28 ounce jar of pasta sauce
  • 2 bell peppers I used a green and red bell pepper. Remove seeds, cut into 1-inch chunks.
  • 1 yellow onion roughly chopped
  • 2 small zucchini cut into 1 inch chunks
  • 1 tablespoon minced garlic
  • 8 ounce can sliced mushrooms
  • .8 ounce package Italian seasoning mix This is the dry salad dressing seasoning mix.

Instructions

  • Spray the crockpot with non-stick cooking spray.
  • Slice the chicken breasts into thirds. Lay them in the slow cooker.
  • Place the vegetables over the chicken. Add the sliced zucchini, bell peppers, and onion. Drain the canned mushrooms and add them to the crockpot. Sprinkle the minced garlic and Italian seasoning over the vegetables.
  • Finish by adding the pasta sauce over the vegetables. Seal the crock pot. Place on low. Cook for 6 hours on low, 4 hours on high.
  • Spoon the yummy sauce and plenty of vegetables over egg noodles. Easy to make and delicious!
