This Breakfast Sausage Biscuit Casserole is a hearty, easy-to-make breakfast or brunch recipe made with breakfast sausage, cheddar cheese, and buttery biscuit topping. It’s perfect for feeding a crowd or meal prepping for the week!

Ingredients

All of the ingredients needed to make the sausage breakfast casserole. With print overlay for clarification.

This cheesy breakfast casserole starts with browned sausage and onion in a creamy gravy made from flour, milk, garlic powder, with a dash of Tobasco. Montreal steak seasoning and a pinch of salt and pepper add just the right kick.

It’s finished with a golden biscuit topping made from mix, butter, milk, garlic powder, and cheddar cheese—comfort food at its easiest!

Biscuits and Gravy Cobbler

This cheesy biscuits and gravy casserole is an easy, hearty breakfast, brunch or dinner made with sausage gravy and Cheddar Bay biscuit topping.

Equipment

  • 9x13 casserole dish

Ingredients

  • 1 pound breakfast sausage mild or hot, your call
  • 1 small onion diced
  • â…“ cup all-purpose flour
  • 3 cups milk
  • ¼ teaspoon garlic powder
  • 1 teaspoon Montreal steak seasoning
  • Dash of Tabasco sauce optional - but it adds so much flavor
  • salt and pepper to taste
  • For the drop biscuits
  • 2 cups Bisquick or Red Lobster biscuit mix
  • â…” cup milk
  • ¼ cup butter melted
  • ½ teaspoon garlic powder
  • 1 cup cheddar cheese shredded

Instructions

  • Preheat oven to 375°F. Spray the baking dish with nonsticks cooking spray. Set aside.
  • In a large skillet, cook sausage over medium heat until browned and crumbly. Use a paper towel and blot the excess grease.
  • Add diced onion and sauté until softened. (About 3 minutes).
  • Sprinkle in the flour and stir to coat the sausage. Cook for 1-2 minutes to lose that raw flour taste.
  • Slowly pour in the milk while whisking constantly. Simmer until thickened (about 5 minutes). Season with garlic powder, Montreal steak seasoning and a dash of Tabasco sauce. Taste and adjust seasoning, adding salt & pepper if needed.
  • Transfer to the prepared casserole dish, spreading it evenly.
  • Now prepare the biscuits. In a medium mixing bowl, mix together the Bisquick baking mix, milk, shredded cheddar cheese, melted butter, garlic powder, stir until just combined. Drop by spoonfuls onto the top of the casserole.
  • Place in the preheated oven. Bake uncovered for 30-35 minutes until the top of the casserole is golden brown. Allow to cool for 5 minutes before serving. Top with a sprinkle of minced parsley and enjoy!

Notes

Brushing the biscuits with melted butter when they come out of the oven makes this meal extra decadent.

    FAQ's

    Can I use homemade biscuit dough instead of a mix?

    Absolutely! If you have a family recipe you'd prefer, by all means, use that instead. I recommend adding the shredded cheese and seasonings to the dough.

    How do I store and reheat leftovers?

    Allow the casserole to cool completely and refrigerate. Reheat covered in the oven. Place in a preheated 350 degree oven for 15 to 20 minutes until hot and bubbly.

    Deb’s tips

    Don't overmix the dough, it will make the biscuits tough. It's ok if there are some lumps in the biscuit dough.
