What makes this recipe irresistible

I fell in love with this cracker toffee after the first bite. There is just something special about the combination of buttery crackers, sweet toffee, and rich chocolate. It's a perfect balance of flavors!

There's no need for fancy ingredients like a candy thermometer. This recipe is a must-make for your cookie trays during the holiday season!

Toffee Saltine Cracker Recipe

Equipment

  • rimmed baking sheet
  • offset spatula
  • Medium saucepan

Ingredients

  • 40 saltine crackers
  • 1 cup butter
  • 1 cup brown sugar packed
  • 2 cups semisweet chocolate chips
  • optional: ¾ cup white chocolate chips, holiday sprinkles and/or chopped pecans

Instructions

  • Preheat the oven to 400°F.
  • Line a cookie sheet or a jelly roll pan with parchment paper. The baking sheet needs to have at least a ½ inch edge.
  • Lay the saltine crackers in a single layer on the cookie sheet. Do not overlap.
  • In a small pot, combine the sugar and butter. Bring the mixture to a boil.
  • Once brought to a full rolling boiling, continue to cook for 3 minutes until the mixture reaches a deep caramel color. Don't leave the stovetop while it's boiling! Stir the mixture constantly.
  • After 3 minutes, immediately pour the caramel mixture over the saltines, spreading it to cover the crackers completely.
  • Bake in the oven for 5 to 6 minutes until bubbly and the crackers look like they are floating.
  • Carefully remove from the oven and (using a knife or off-set spatula), straighten any crackers that have shifted. Don't touch the crackers with your fingers, you'll get burned!
  • Sprinkle the chocolate chips over the top and let them sit for a few minutes to melt. If the pan isn't hot enough, you can return it to the oven for a few minutes to melt the chocolate chips.
  • If you're also using white chocolate chips for decorating, spread those around the top as well.
  • Spread the melted chocolate evenly. Swirl the white chocolate. Top with chopped nuts, or holiday sprinkles.
  • Allow to cool completely. To speed up the process, place the pan in the fridge for a few minutes to set the chocolate.
  • Once set, break into pieces and enjoy!

Notes

Storage - Store saltine cracker bark in an airtight container for up to one week at room temperature. If you live in a humid climate put it in the fridge instead. This freezes well up to 2 months.

Why is my Christmas crack chewy?

If your toffee is chewy that usually means that the chocolate and caramel haven't set completely. Pop it into the fridge for 15-30 minutes to help it harden.

Can I use margarine instead of butter?

No, butter works best for flavor and texture. Margarine contains more water, which can affect how the toffee sets.

Can I use unsalted crackers instead of saltines?

You can, but saltines give that sweet-salty contrast that makes this recipe shine.

What happens if the toffee doesn't boil as long as the recipe calls for?

If you don't boil it as directed, the toffee won't set. It will be sticky and there's no way to fix it.

Deb's tips for the saltine toffee

Cover as much of the cookie sheet as you can with the crackers without overlapping them. The toffee layer is thin, you want to make sure it has crackers to stick to.

  • Make sure you add the chocolate chips as soon as the candy comes out of the oven so that the residual heat will melt them so you can spread it evenly.
  • I've used a variety of toppings, from sea salt flakes to sprinkles, to nuts. No matter which topping you choose, make sure to apply it before the chocolate hardens so that it sticks.

    Toffee crackers with sprinkles! Fun, easy, and delicious, too. I’ve not put sprinkles on them before but these look so festive I’m going to add sprinkles. We love these as a special treat. We always lay the salted side of the cracker down and put the toffee mixture on the unsalted side. So good!

    This easy recipe is a delightful morsel that I make when I don’t want to spend a lot of time in the kitchen. Love the salty sweet taste and of course there’s chocolate involved! What’s not to like????? It also makes a lot!
    I’ve never used sprinkles on top, but will do that for Christmas because it is so festive!
