Why you'll love this recipe

It's no secret I'm not a fan of pineapple. However, when Dan had this cocktail last week, he announced this definitely needed to be on the blog! And since he's my official taste tester.... this man knows what he's talking about.

This drink is perfect for a lazy afternoon, pool party or hot summer's day! Cheers, my friend!

Ingredients to make the cocktail; pineapple juice, cream of coconut, simple syrup, lime and light rum.

Ingredients and/or variations

  • white rum - you can use dark rum in a pinch.
  • Pineapple juice - I use canned pineapple juice for this cocktail. If you prefer, you can absolutely use fresh!
  • Cream of coconut - you'll find this in the bartending section of the grocery store.
  • fresh limes
  • simple syrup
  • pineapple slices and mint leaves for garnish
  • ice cubes

Equipment

You will need a jigger to measure and a cocktail shaker. (In a pinch, I've used a mason jar with a screwtop lid.) You'll also want a tall highball glass and a sharp knife to slice the garnish.

FAQ's

Where did pineapple crush originate?

It's not what you think! (At least, I thought this originated in Jamaica.) It actually originated in Newfoundland. Surprise, right?

Top Tip

Shake the cocktail really hard until the outside of the shaker is frosty and cold! Then pour it over the ice in the glass and garnish.

Equipment

  • 1 jigger
  • 1 cocktail shaker
  • sharp knife
  • 1 high ball glass

Ingredients

  • 2 ounces white rum
  • 1 ounces pineapple juice
  • ½ ounce cream of coconut
  • ½ ounce fresh lime juice
  • ½ ounce simple syrup
  • Pineapple slices and mint leaves for garnish
  • Ice cubes

Instructions

  • Fill a shaker with ice cubes.
  • Add 2 ounces of white rum to the shaker.
  • Pour in the pineapple juice and cream of coconut to the mix.
  • Squeeze in ½ ounce of fresh lime juice and simple syrup.
  • Shake the ingredients well to chill the mixture.
  • Strain the cocktail into a glass filled with ice.
  • Garnish with pineapple slices or a pineapple wedge and mint leaves for a tropical touch.
  • Stir gently before sipping to mix the flavors.
