What makes this recipe irresistible

Just look at this casserole of ghoulish goodness. Seriously, who could resist? 🎃 This is perfect for a kid's Halloween party. Everyone will be squealing when it is placed on the table!

What you'll need: ingredients

  • spaghetti
  • vegetable oil
  • lean ground beef
  • yellow onion
  • pasta sauce
  • Rotel
  • cream of chicken soup
  • Worcestershire sauce
  • taco seasoning
  • pepper jack cheese
  • hot dogs
  • fresh mozzarella pearls
  • fresh sliced mozzarella
  • whole pitted black olives

Spooky variations to try

Black pasta (squid ink pasta) would be a great variation. Or you can you any fun pasta shape. Shaving some mushroom skulls, would be a fun addition too!

Step-by-step guide: instructions 

This is an overview of the instructions. For complete directions, scroll down to the bottom.

  1. Preheat the oven. Cook and drain pasta, set aside.
  2. Cook the ground beef and diced onions. Drain excess grease.
  3. Prepare the hot dog "fingers". See video below for instructions. After preparing, set aside.
  4. Add the spaghetti sauce, Rotel, cream of chicken soup, Worcestershire sauce, and taco seasoning to the cooked beef. Mix well.
  5. Next, add the cooked pasta and shredded pepper jack cheese to the meat mixture and toss. Transfer the spaghetti mixture to a casserole dish.
  6. Randomly place the hot dog "fingers" into the spaghetti.
  7. Cover and bake until hot and bubbly.
  8. Next, prepare the olive "eyes" and "spiders".
  9. When baking is done, remove the casserole from the oven. Add the sliced, fresh mozzarella and scatter the mozzarella pearls over the top of the pasta. Return the dish to the oven, uncovered. Bake for 2-3 minutes or until the mozzarella begins to melt.
  10. Remove the casserole, working quickly, assemble the "eyeballs" onto the mozzarella pearls and the "spiders" onto the sliced mozzarella.

Frequently asked questions (FAQ's)

I'm not a fan of hot dogs. Can I use another protein instead?

Omitting the hot dogs is an easy solution. Frozen meatballs would work great in this recipe, too. Use them as a base for meatball eyeballs by topping them with sliced fresh mozzarella, followed with the sliced olives for eyes.

Can I substitute with another cheese?

Absolutely! Replace the Pepper Jack with your favorite cheese. Cheddar, Monterey Jack, and Colby are great substitutions. I do recommend shredding the cheese from a block instead of using pre-shredded cheese.

What can I add to Monster Spaghetti to make it even better?

Because this is a TexMex spaghetti, you can add ingredients like black beans, kidney beans, corn, jalapenos or cilantro. Use the flavors you love!

Deb's tips for the perfect dish

Have fun with this. The kids can help you make the hot dog fingers and decorate the casserole. Make it wacky, spooky and fun!

  • Cook the pasta to al dente, it will finish cooking in the oven.
  • Be sure this dish is plenty saucy! Don't be afraid to add a little extra sauce if necessary.

How to store leftovers

Refrigerate - Allow to cool completely and store in an airtight container in the refrigerator up to 3 days.

Freezer - This dish freezes well up to three months.

Reheat - Reheat individual servings in the microwave. If you're reheating the casserole. Place it in the oven covered until hot and bubbly. About 20 minutes.

Monster Spaghetti Recipe

Equipment

  • Cast Iron Skillet
  • 9x13" casserole or baking dish

Ingredients

  • 12 oz. package spaghetti cooked to al dente and drained
  • 2 Tbsp. vegetable oil
  • 1 lb. lean ground beef
  • 1 large yellow onion diced
  • 12 oz. ½ jar spaghetti sauce
  • 10 oz. can Rotel undrained
  • 10.5 oz can cream of chicken soup
  • 2 Tbsp. Worcestershire sauce
  • 1 oz packet taco seasoning
  • 1 c. shredded pepper jack cheese
  • 4 - 5 hot dogs
  • 4 oz. fresh mozzarella pearls
  • 4 oz. fresh sliced mozzarella
  • 10 - 12 whole pitted black olives

Instructions

  • Preheat oven to 350 degrees F.
  • In a large pot of seasoned water, cook the pasta to al dente, and drain well.
  • Heat the vegetable oil in the skillet. Add ground beef and diced onions, and cook until the beef is no longer pink and the onions soften. Drain excess grease if necessary.
  • While the beef and onions are cooking, prepare the hot dog "fingers". Score and remove a square shape on one end of each hot dog to sculpt a fingernail, and using a knife, make shallow cuts to resemble knuckles. Set aside.
  • Once the ground beef is fully cooked, add spaghetti sauce, Rotel, cream of chicken soup, Worcestershire sauce, and taco seasoning to the skillet. Mix well.
  • Add cooked spaghetti and shredded pepper jack cheese to the meat mixture and toss until well combined. Transfer to a casserole or baking dish.
  • Randomly place the hot dog "fingers" into the spaghetti.
  • Cover with foil. Bake in a 350-degree oven for 20-25 minutes until the spaghetti is heated through.
  • While the spaghetti is baking, prepare the olive "eyes" and "spiders". Slice a few olives to create circles. These will be placed on the mozzarella pearls to look like eyeballs. Then, slice several of the olives lengthwise-these will be placed on the sliced mozzarella and create the shape the "spider" bodies.Using the remaining olive halves, cut eight "legs" for each of the spiders.
  • Take the casserole out of the oven and discard foil. Evenly place the sliced, fresh mozzarella andscatter the mozzarella pearls over the top of the spaghetti..Return the entire dish to the oven, uncovered, and bake for 2-3 minutes or until the mozzarella begins to melt.
  • Remove the casserole from the oven, and working quickly, assemble the "eyeballs" onto the mozzarella pearls and the "spiders" onto the sliced mozzarella.
  • Serve and enjoy!
