Ingredients
- 1 box scalloped potatoes with sauce mix I used the Betty Crocker brand
- 12 ounce can evaporated milk
- 1 cup water
- 4 large eggs
- 1 ½ cup shredded cheddar cheese
- 1 pound breakfast sausage
- 12 ounce bag frozen peppers and onions
- 1½ teaspoons Montreal steak seasoning
Instructions
- Grease the crockpot well with nonstick spray or butter.
- In a skillet over medium heat, cook the sausage until browned. Add the frozen peppers and onions during the last 3 minutes of cooking and sauté until slightly softened and any excess moisture cooks off. Set aside.

- Add the scalloped potatoes and sauce packet to the crockpot. Pour in the evaporated milk and 1 cup water. Stir to combine. Stir in the cooked sausage and veggie mixture.

- In a bowl, whisk the eggs with the Montreal steak seasoning. Pour evenly over the mixture and top with cheese.

- Place a paper towel over the top of the crockpot. Do not allow it to touch the egg mixture. Top with a lid. Cook on LOW 3 hours.
- It's ready when the potatoes are tender and the center is set. If needed, crack the lid for the last 20-30 minutes to allow it firm up.
