What makes this recipe irresistible

Equipment

  • 1 Crockpot

Ingredients

  • 1 to 1 ½ pounds chicken tenders
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Montreal steak seasoning
  • 24 ounce jar pasta sauce (Use a good, high quality sauce.)
  • 8 ounces mozzarella cheese, shredded
  • ¾ cup panko bread crumbs
  • 2 tablespoons butter
  • ¼ cup grated Parmesan cheese
  • Optional fresh parsley or basil for garnish

Instructions

  • Spray the crockpot with nonstick cooking spray, then spoon about a cup of pasta sauce on the bottom of the crockpot.
  • Lay the chicken tenders in one even layer. Sprinkle evenly with Italian seasoning and Montreal steak seasoning.
  • Pour the jar of pasta sauce over the seasoned chicken. Cover and cook on LOW for 4-5 hours or HIGH for 2 ½ to 3 hours, until the chicken is tender.

  • Melt the butter in a small skillet. Add the breadcrumbs and toast until golden brown. Remove from heat and place the bread crumbs in a bowl. Toss with the Parmesan cheese. Set aside.

  • When the chicken is cooked through, sprinkle the shredded mozzarella evenly over the top. Scatter the toasted Parmesan panko mixture over the cheese. Cover and cook for another 15-20 minutes, just until the cheese melts.

  • Garnish with parsley or basil, if desired. Spoon the chicken and sauce over pasta or enjoy as-is with a side salad and garlic bread.

Let's clear up a few things before you start

Can I use chicken breasts instead of tenders?

Absolutely. Slice larger chicken breasts in half lengthwise so they cook evenly and stay tender. Thick pieces can take longer and don't soak up the sauce quite the same.

Do I need to sear the chicken first?

Nope, and that's part of the charm here. Everything cooks right in the slow cooker, which keeps this recipe quick and easy without extra steps.

What if my sauce seems thin?

If it looks a little loose, remove the lid for the last 20-30 minutes of cooking to help it thicken up. Slow cookers trap moisture, so this quick trick usually does the job.
