This Crock Pot Mississippi Chicken is a delicious and easy recipe to make. It is made with simple ingredients that are all full of flavor. The chicken is slow cooked in the crockpot for several hours to create a tender and flavorful meal.

  • skinless boneless chicken breasts
  • dry ranch dressing mix (such as Hidden Valley Ranch or Uncle Dan's)
  • jar of tangy pepperoncini peppers
  • stick of butter

Instructions

  1. Spray crockpot vessel with non stick cooking spray.
  2. Place chicken in the bottom of slow cooker. Season the top of the chicken with dry ranch seasoning mix packet.
  3. Top with pepperoncini peppers, cubed butter, and ½ cup reserved pepper juice over chicken.
  4. Cover, and cook until chicken is fork-tender on LOW for 6 to 8 hours.
  5. Shred chicken using two forks.
  6. Serve and enjoy!

Deb's tips

  • This is a great recipe to make ahead for meal prep and to freeze for later. Once the chicken is cooked, let it cool completely before freezing.
  • To prevent the chicken from drying out while cooking, be sure to cover the crockpot with a lid.
  • If you prefer a milder flavor, use less pepperoncini peppers or switch them out for mild banana peppers.
  • You can also use a slow cooker liner for easy clean-up if you prefer.
  • Fresh parsley and sliced green onions are an excellent garnish for this recipe.
  • The ranch packet can be quite salty, so you can use unsalted butter if you want to cut down on the salt.

Variations

  • Add a packet of au jus gravy mix or brown gravy mix in place of the ranch seasoning mix.
  • If you prefer dark meat, boneless skinless chicken thighs can be used instead of chicken breasts for this recipe.
  • For a spicier version, add some red pepper flakes to the seasoning mix or use a spicy ranch packet.
  • Swap out the butter for cream cheese or sour cream if desired.
  • Or, try adding some cooked bacon for an extra smoky flavor!
  • For additional flavor you can add a packet of au jus mix.
  • For a cheesy version, place the shredded chicken in a casserole dish then top with provolone cheese. Place it under the broiler for a couple minutes for a melted provolone cheese twist.

Storage

Refrigerate - Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.

Freezer - This dish is great for freezing! Let it cool completely before transferring to a freezer-safe container. Freeze for up to 3 months and thaw overnight before reheating.

Reheating - To reheat, place chicken in a saucepan over medium heat and stir until heated through. Alternatively, you can warm it up in the microwave or oven.

      Super easy and yummy. I left out the butter and added some juice from the pepperoncini pepper jar instead. At the end I shredded the chicken and added plain non fat Greek yogurt for a WW friendly dish. Next day, the chicken was used in a tortilla as a wrap and added salsa and sour cream or plain non fat greek yogurt to finish it. My husband ate it straight from the fridge too. This is a keeper for sure!
