Cool Whip Ice Cream Sandwich Cake is a simple dessert that is perfect summer dessert. Fun for a birthday party, bbq or special occasions. Made with just a few ingredients, it can be easily assembled in no time at all!

Oreo Ice Cream Sandwich Cake

I love this easy recipe. It's terrific all summer long! This Cool Whip Ice Cream Sandwich Cake is so easy to make, that you don't even need an ice cream maker!

With only 4 simple ingredients, this is one of the easiest cakes you'll ever make! And the best part? No baking is required!

Ingredients/variations

For the exact measurements, please refer to the printable recipe card at the bottom of this post. 

  • 24 vanilla ice cream sandwiches - you can use your choice of ice cream sandwiches!
  • two tubs of Cool Whip - of course you can make your own whip cream, but why? 😋
  • Oreo cookies - you can decorate with a variety of toppings! m&m's, heath bar bits, chocolate chips, Reece's peanut butter cups, butterscotch bits - use your favorite!
  • chocolate syrup - caramel sauce, strawberry sauce, etc. Whatever sounds great to you!

You can use different flavors of ice cream-filled ice cream sandwiches, such as chocolate, Oreo, strawberry, mint, birthday cake or Neapolitan. Yum!

Instead of using chocolate syrup, you can use caramel syrup, hot fudge sauce, or even a magic shell on top of the cake. Fun toppings like m&m's, mini chocolate chips or Reese's peanut butter cups!

    If you're looking for a quick and easy dessert, then a delicious ice cream sandwich cake is the way to go! This Cool Whip Ice Cream Sandwich Cake is always a hit with kids and adults alike.

    How do you keep ice cream sandwiches from melting?

    To prevent the ice cream sandwiches from melting be sure to work quickly and get them back into the freezer as soon as possible.

    How do you transport ice cream cake without melting it?

    If you need to transport this cake, place it in a cooler with ice packs on the sides and bottom. This will help keep it from melting while you travel. If you are using regular bagged ice instead of ice packs, add some rock salt to the ice.

    How long will an ice cream cake last in a cooler?

    If you are using ice packs, the cake will last up to 2 hours in a cooler. If you are using regular ice, it will last about an hour. If you are using dry ice to keep it cold, then it can last up to 24 hours in a cooler.

    Top Tip

    For easy removal of the ice cream cake, you can line the bottom of your baking dish with parchment paper. And, then you can remove the entire cake from the pan.

    • Be sure to work quickly when assembling the cake so the ice cream sandwiches don't melt.
    • If you need to transport the cake, place it in a cooler with ice.

      Storage

      Freezer -  store in a freezer-safe container for up to 3 months.

      Refreeze - once the cake has been thawed, it cannot be refrozen.

      Ingredients

      • 24 vanilla ice cream sandwiches unwrapped
      • 16 ounces whipped topping thawed (such as Cool Whip® - that's 2 containers)
      • 12 Oreo cookies crushed
      • ½ cup chocolate syrup

      Instructions

      • Place a layer of ice cream sandwiches in the bottom of a 9x13-inch dish.
      • Top with a layer of cool whip, crushed Oreos and chocolate syrup.
      • Repeat with second layer of ice cream sandwiches, remaining cool whip, crushed Oreos and chocolate syrup.
      • Cover dish with aluminum foil and freeze until set, at least 30 minutes.

      Notes

      Variations

      • Use different flavors of ice cream sandwiches, like strawberry of mint chocolate ice cream sandwiches. 
      • Instead of using chocolate syrup, you can use caramel syrup, hot fudge sauce, or even a magic shell on top of the cake.
      • Mix up the toppings - sprinkles, mini chocolate chips, or mini m&m to top the cake. Actually you can use any type of candy bars or cookies that your family enjoys.

          I made this for a cookout, was ALL gone within 5 minutes. I didn't even get any. Multi requests for the recipe. I'm making a small one for my husband and myself, at home. He didn't get any at the cookout either

          I had made this several years ago using a 12 pack of ice cream sandwiches and cool whip. I loved yours better with the crushed Oreos and I used Carmel instead of chocolate syrup (what I had on hand and it was delicious! Fed 6 people large slices and have 3 slices still in the freezer. Definitely a keeper.Thank you for sharing it.
