Not only is this creamy chicken and rice casserole super simple to make, but it also tastes fantastic. With just a few pantry staples and about an hour of your time, you will have a one-pot meal that even picky eaters will enjoy.

This cozy Chicken Rice-A-Roni Casserole is packed with comforting flavors and pantry-friendly ingredients. It starts with chicken-flavored Rice-A-Roni, creamy soup, and a dollop of sour cream for richness.
Toss in tender shredded chicken, frozen mixed veggies, and a dash of Montreal steak seasoning and paprika for a savory kick. It’s all baked under a blanket of melty cheddar cheese and crispy French fried onions—aka the crunchy crown jewel of casseroles!

Rice-A-Roni Chicken Casserole
Equipment
- 9x13 casserole dish
Ingredients
- 6.9 ounce box Chicken-Flavored Rice-A-Roni
- 4 cups diced or shredded cooked chicken
- 10 ounces frozen mixed vegetables
- 10.5 ounce can cream of chicken soup
- 1 cup sour cream
- 1 ½ teaspoons of Montreal steak seasoning
- ½ teaspoon paprika
- 2 cups shredded cheddar cheese
- ¾ cup French fried onions
Instructions
- Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish, set aside.
- Prepare the Rice-A-Roni according to the package instructions, reducing the water called for by ¼ cup.
- Shred the chicken into bite-sized pieces.
- In a large mixing bowl, combine the cooked Rice-A-Roni, shredded chicken, cream of mushroom soup, cream of chicken soup, sour cream, 1 cup of shredded cheese, frozen veggies, and Montreal Steak Seasoning. Stir until everything is combined.
- Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining shredded cheese on top. Finish by topping with fried onions.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until bubbly and the top of the casserole is golden brown.
- Let the casserole rest for a few minutes before serving. Garnish iwth minced parsley or thinly sliced green onions.

Deb’s top tips
Cover the casserole tightly with aluminum foil. It will keep the casserole from drying out.
- A rotisserie chicken works great for the shredded chicken.
- This casserole is great to prep ahead of time. Follow the instructions and but leave the fried onions off. Add them when you are ready to bake the casserole.
Creative variations to try
- Add broccoli florets, or bell peppers for extra color and nutrition.
- If you love a little heat, mix in a can of diced green chilies, a sprinkle of red pepper flakes, or even a dash of hot sauce into the creamy sauce.
