Creamy Chicken Rice-A-Roni Casserole is loaded with tender chicken, mixed veggies, cheddar cheese, and crispy onions. Easy comfort food your family will love!
Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish, set aside.
Prepare the Rice-A-Roni according to the package instructions, reducing the water called for by ¼ cup.
Shred the chicken into bite-sized pieces.
In a large mixing bowl, combine the cooked Rice-A-Roni, shredded chicken, cream of mushroom soup, cream of chicken soup, sour cream, 1 cup of shredded cheese, frozen veggies, and Montreal Steak Seasoning. Stir until everything is combined.
Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining shredded cheese on top. Finish by topping with fried onions.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until bubbly and the top of the casserole is golden brown.
Let the casserole rest for a few minutes before serving. Garnish iwth minced parsley or thinly sliced green onions.

Storage - Place leftovers casserole in an airtight container and store in the fridge for up to 3 days. Free up to three months.Reheat - To reheat, simply place the desired amount of casserole in a microwave-safe dish and heat for 1-2 minutes, stirring occasionally until heated through. Alternatively, you can reheat it in the oven at 350 degrees for about 20 minutes.
