This viral Chicken Cobbler Recipe has taken social media by storm and we're proud to be a part of it!  With a succulent chicken and vegetable layer that is coated in a creamy sauce and then topped with a buttery biscuit topping. It's a perfect dish for any occasion!

Chicken cobbler recipe with bisquick  

You only need simple ingredients that you probably already have on hand. This is a hearty comfort food that will warm you up in the colder months and the whole family will love it. Plus, it tastes great the next day. Who doesn't love leftovers?!! 

Though this is a "viral" recipe, it's actually a recipe I learned from my Grandma years ago. It was one of her go-to recipes. Kinda of a kitchen sink meal, it's perfect for using leftover chicken, turkey or vegetables.

My twist on Grandma's recipe is the creamy sauce. It makes it that much easier to make and we love this recipe!

Chicken Cobbler Recipe

Ingredients

  • 4 cups cooked chicken breast diced
  • 10- ounce bag of frozen mixed vegetables
  • 1 clove garlic minced
  • 2 cans 10.5 oz cream of chicken soup
  • 12- ounce can of evaporated milk
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For the Drop Biscuits
  • 2 cups Bisquick
  • ⅔ cup milk
  • ¼ cup butter melted
  • ½ teaspoon garlic powder
  • ½ cup shredded cheddar cheese

Instructions

  • Preheat your oven to 375°F. Spray 9x13 casserole dish with nonstick cooking spray, set aside.
  • In a large mixing bowl, combine the diced chicken, frozen mixed vegetables, cream soup, evaporated milk, diced onions, garlic, Italian seasoning, salt and pepper. Mix to combine.
  • Transfer to the prepared casserole dish, spreading it evenly.
  • In a medium bowl, mix together the Bisquick baking mix, milk, shredded cheddar cheese, melted butter, garlic powder, stir until just combined.
  • Use a spoon to drop tablespoon-sized portions of the mixture evenly over the chicken and vegetable filling in the casserole dish. Small spoonfuls are better than large spoonful as the dumplings will expand as they baked.
  • Place the casserole dish in the preheated oven and bake for 30-35 minutes or until the biscuits are golden brown and the filling is bubbly.
  • Remove from the oven and allow the cobbler to cool for a few minutes before serving.

Notes

Refrigerate - Store leftovers in an airtight container in the fridge for up to 3 days. To freeze, cool the casserole completely and then transfer it to a freezer-safe container for up to three months. 
Reheat - The best way to reheat this casserole is in the oven at 350 degrees f for 20-25 minutes or until warm all the way through.

    Creative variations to try

    • This casserole is a great way to use leftover rotisserie chicken or turkey. If you don't have leftover chicken, you can bake or poach some chicken breasts or even canned chicken for this recipe.
    • Though this recipe calls for frozen vegetables you can certainly use chopped fresh vegetables. You'll need 1 ½ to 2 cups fresh vegetables. There is no need to steam them first.
    • Feel free to change up the vegetables that you use in the filling. You can use a mixture of green beans, carrots, frozen peas, corn, potatoes, onions, lima beans, or any other vegetables that you want to add to this cobbler.
    • I've found that using evaporated milk gives casserole a deep rich flavor. You can use regular milk instead if you don't have a can on hand, but give the evaporated milk a try if you have it makes a difference. It's so much creamier!
    • Swap out the Bisquick for a box of Red Lobster's Cheddar Bay Biscuit Mix, and be sure that you add in the seasoning packet for even more flavor!

    What is a chicken cobbler?

    Chicken cobbler is a chicken pot pie with a slight twist. The difference is that the biscuit topping has additional seasonings to give this comfort food an even more delicious flavor. 

    Can I prep this ahead? 

    One great thing about this chicken casserole recipe is that you can assemble it in the morning. Store it covered with plastic wrap in the fridge until you get home from work and are ready to bake it. If it's cold when you bake add 3-5 minutes to the baking time.

    How can I tell when the chicken pot pie is done baking?

    You can test it with a knife or toothpick inserted into the center. If it comes out clean then your cobbler is done! You can also check to see if the biscuit topping has reached a nice golden brown color.

    Deb's tips for the perfect dish

    Don't pour the biscuit batter onto the casserole. Drop it by spoonfuls to the top of the casserole. If you pour it may sink to the bottom instead of forming a nice crust on top. 

    • Make sure that you spray your casserole dish well with nonstick cooking spray, or you can also grease it with butter or shortening. This makes clean-up so much easier.  
    • Spread your vegetable mixture into an even layer so that you have a flat surface for your biscuit topping to spread out and create an even crust.

      Made this tonight and used the Cheddar Bay biscuits. I didn't use the packet of seasonings because everyone in the comments for the biscuits said it made them very salty! We have leftovers for tomorrow unless my son goes in for seconds, so I guess we will see. I think the most time intensive task is dropping the biscuit batter. Although that's probably because I decided to get picky about my coverage. Next time I will just glop it. lol

        Haha, that's awesome! Yes plopping is a technical term 😂 and there's no reason to be precise. That's a great point. As the casserole bakes the dough expands and fills in the top. Glad the casserole is a hit and that it's made your weekly rotation!

          I added 1 t onion powder and used 2 cans drained Veg All as I didn't have frozen vegetables. We enjoyed this for dinner last night and will make it again.
