Sweet Hot Pickled Peppers

Try and say that three times fast. 😀 I made it halfway thru one time on a live feed the other day. Then I stopped because I figured it was best to quit while I was ahead! 😀

I bought a big bag of peppers at the store a few weeks back. Those little sweet peppers are so delicious, they are an easy snack for lunches too. I've been working with them and making soups and appetizers. Lots of delicious stuff. Good thing too because the bag must have had 40 in it!

You know me...nothing goes to waste in my house!

Only to waist 😀  But that's ok this time, because these little peppers aren't bad for you at all!

They are super easy to put together and have just the right amount of sweet and hot.

You'll start by cleaning the peppers and slicing them fairly thin. Make sure to layer in several different colors. And pack them tight so the vessel is completely full.

You'll make the juice on the stove - apple cider vinegar, sugar, red pepper flakes and water. Everything is stirred together until the sugar dissolves. Then ladle it into the jar.

Fill it completely to the top. Seal it tightly and tuck it in the back of the refrigerator. After one week, the pickled peppers are ready to enjoy!

They will keep for several weeks. They are delicious bright crunches of flavor. Yummy in a sandwich, a bright little snack and great in a salad.

They are also great to give as gifts. Who wouldn't want this bright color of goodness? Don't let the heat of the red pepper flakes scare you away. It's not overpoweringly hot, just gives a really good amount of flavor & warmth.

Sweet Hot Pickled Peppers

Sweet Hot Pickled Peppers are delicious bright crunches of flavor. Yummy in a sandwich, a bright little snack and great in a salad. They are also great to gift as gifts. Who wouldn't want this bright color of goodness?

Ingredients

  • 2 cups cider vinegar
  • 1 cup water
  • 2 cups sugar
  • 2 tablespoons salt
  • 1 teaspoon red pepper flakes
  • 15-20 small peppers
  • 3-4 small glass jars

Instructions

  • In a medium pan over medium heat combine the vinegar, water, salt, sugar and red pepper flakes. Stir until the sugar & salt are completely dissolved. Remove from heat and allow to cool completely.
  • Slice the peppers in ¼ inch slices & add them to small glass jars. Pack them completely full. Pour over marinade & cover tightly. Place in refrigerator & marinade them for one week before using. Will keep for several weeks in the refrigerator.
