Eagle Brand Lemon Icebox Pie

Eagle Brand Lemon Icebox Pie is what I call a cool, creamy slice of sunshine! It’s no-bake, no-fuss, and all flavor. If you love lemon, this one’s for you! Bonus? It only takes 10 minutes to whip up!

I first had a no-bake lemon pie at a summer cookout when I was a kid. My aunt set it on the dessert table, and I remember watching everyone sneak extra slices like it was some kind of secret treasure. (I may have been guilty of that, too!)

The bright, tangy lemon, the sweet creamy filling, and that buttery graham cracker crust—it was love at first bite! Now, I make it year-round, (espeically in the summer!), and it always disappears just as fast!

This easy lemon icebox pie is the ultimate warm-weather treat—perfect for BBQs, cookouts, potlucks, or anytime you need a sweet, citrusy pick-me-up. (Spoiler: There will be NO leftovers!)

It’s the MVP of easy desserts! Just like my recipe for No-Bake Hershey Pie, it's effortless but still totally impressive.

What you need to make lemon icebox pie

For the exact measurements for this easy no-bake pie, please refer to the recipe card at the bottom of this post. 

  • Graham cracker crumb crust - store bought is my shortcut, or if you'd like to make your own crust, use this yummy recipe!
  • Lemon zest and fresh lemon juice - use fresh lemons. It will take 4-5 lemons for that bright citrusy flavor. No bottled lemon juice, it's just not the same!
  • Eagle Brand Sweetened Condensed Milk - Stick with Eagle Brand. Off brands won't set correctly. No one wants a runny pie!
  • Pure vanilla extract - just a touch, but it adds so much!

Optional garnishes include topping with cool whip, crushed graham cracker crumbs (they add the perfect crunch!) or lemon slices, so pretty!

Instructions for the no-bake summer dessert

This is an overview of the instructions. For the complete directions just scroll down to the bottom!

  1. Whisk the condensed milk, and vanilla in a medium bowl.
  2. Add the lemon juice and zest, and continue whisking until it's smooth and begins to thicken.
  3. Pour the filling into the graham crackers crust.
  4. Freeze for four hours.
  5. Top with Cool Whip and garnish with grahama cracker crumbs or lemon slices before serving.

  • whisk - no kitchen can be without a great whisk!
  • I prefer to use a large glass mixing bowl personal preference, but this is the one I use.
  • This is the best lemon/lime juicer I've found! I use it all the time.

Frequently asked questions (FAQ’s

Why did my pie turn out watery?

Because you didn't use Eagle Brand sweetened condensed milk. That's the usually it. Use the name brand.

How do you keep the pie from getting too soft?

Keep it frozen until ready to serve! It slices cleanly and will hold it's shape perfectly.

Can I turn this into mini pies for individual servings?

Absolutely! Just buy single serving crusts and split the filling evenly between the crusts. Bonus? No slicing! Just dig in and enjoy!

Deb's top tips

Use only Eagle Brand sweetened condensed milk. I can't stress this enough. Other brands result in a runny pie.

  • Go fresh! Skip the bottled juice—it won't give you that bright, zesty flavor.
  • For the cleaniest slices, serve it frozen.

  • 🫐Make it extra fancy! Add fresh berries on top for a fruity twist.
  • 🥥 Want a coconut twist? Fold in toasted coconut flakes for a tropical vibe.

Storage tips

The no-bake lemon pie is best kept frozen. It's easier to slice and will keep its shape. Wrap it well in plastic wrap and freeze until you're ready to slice and enjoy!

Equipment

  • whisk
  • Large mixing bowl
  • Lemon/Lime Juicer

Ingredients

  • 1 graham cracker pie crust
  • ¾ cup lemon juice 4-5 lemons
  • 2 cans Eagle Brand Sweetened Condensed Milk
  • ½ teaspoon vanilla
  • 1 lemon zested
  • homemade whipped cream or cool whip optional topping

Instructions

  • Whisk the sweetened condensed milk and vanilla together in a large bowl.
  • Add the lemon juice and zest, continue whisking until it's smooth and begins to thicken.
  • Pour the lemon icebox pie filling into the graham cracker crust. Smooth with the back of a spoon.
  • Freeze for four hours until firm.
  • Allow a frozen pie to stand at room temperature for 20 minutes before slicing.
  • If desired, top with cool whip and lemon zest or graham cracker crumbles. Enjoy!

Notes

Although you can refrigerate this pie, I recommend keeping it frozen. It slices so much cleaner frozen.
