These Strawberry Jam Sandwich Cookies are an easy shortcut cookie recipe made with refrigerated sugar cookie dough and sweet strawberry jam. They're soft, buttery, and lightly crisp around the edges with a fruity filling that makes them look bakery-worthy with very little effort.
They're just as welcome on a Christmas cookie tray as they are tucked into a lunchbox or served as an after-school treat.

Why you'll love this recipe
One of my favorite things about this recipe is how easy it is to customize. Swap in your favorite jam, use different cookie cutters for the season, or decorate them with a light dusting of powdered sugar for an extra-special touch. They're simple enough for a weekend baking project with the kids, yet pretty enough to share with friends and family. Best of all, the shortcut ingredients mean you can enjoy homemade cookies without spending hours in the kitchen.

Strawberry Sandwich Cookies
Equipment
- baking sheet
- Parchment Paper
- Rolling pin
- Cookie cutter
- Teaspoon
Ingredients
- 1 package store-bought sugar cookie dough
- ¼ - ½ cup jam flavor of your choice - strawberry, raspberry, peach, or apricot are some of the favorites used.
Instructions
- Preheat the oven as per package instructions Line baking sheet with parchment paper.
- Check the instructions on the store-bought dough to prepare it for rolling. The package I used instructed me to knead. ¼ cup all purpose flour into the dough.
- Once the dough is ready for rolling, form it into a round and cut it in half.
- Lightly flour the surface you are rolling on, and roll out ½ of the dough to ¼ inch thickness.
- Cut out desired shapes and place half of them on a parchment lined cookie sheet 2 inches a part.
- Microwave the jam for about 10 seconds so will easily spread.
- Place a teaspoonful of jam on the center of each cookie and spread it gently - making sure it doesn't get too close to the edges of the cookie.
- Cut a small shape out of the center of the remaining shapes.
- Place them over the top of the jam topped cookie, lining up the edges. Press gently around the edges with your finger or a fork to seal.
- Repeat the same process with the second half of the dough.
- Bake in a preheated 350 degree oven for 10-12 minutes, or until they are just starting to turn brown around the edges.
- Let them cool completely on the cookie sheet. Then with an offset spatula transfer to a cooling rack.

Test kitchen notes
I've tested these cookies with several different fillings, and thicker jams or preserves consistently give the best results because they're less likely to leak during baking. Strawberry is my go-to, but raspberry, apricot, blackberry, and orange marmalade are all delicious options.
If you're feeling a little creative, spread a thin layer of sweetened cream cheese under the jam for a strawberry cheesecake twist.
And for an extra-pretty finish, dust the cooled cookies with a light sprinkle of powdered sugar just before serving. It gives them a festive bakery-style look without any extra work.
Instructions

Don't forget to bake the small cutouts you made - those are yummy too! Just top them with pretty holiday sprinkles so they are super festive!
FAQ's

Microwaving the jam will help it will easily spread over the dough.
Yes! Bake the cookies up to two days ahead and store them in an airtight container. They also freeze well for up to three months.

Deb's top tip
Don't overfill the cookies. It's tempting to add extra jam, but a thin layer works much better. Leave about a ¼-inch border around the edges before sealing the cookies together. This helps prevent the filling from bubbling out during baking and gives you beautifully shaped Strawberry Jam Sandwich Cookies every time.
