Red Velvet Bundt Cake

Red velvet cake has a way of stealing the spotlight. That deep crimson crumb, the hint of cocoa, and the creamy tang of cream cheese frosting, what's not to love?!! Growing up, it was the "fancy" cake, reserved for holidays or those rare moments when Mom pulled out the good china.

Fast forward to a few years ago when I tried a slice from Nothing Bundt Cakes for the first time… and instantly wondered why I hadn't been eating it every week of my life! The moist, tender texture, the luxurious flavor, and that swoop of tangy cream cheese frosting draped just so-pure swoon.

The good news? You can recreate that bakery magic right at home, and I promise your fork will be just as happy.

What makes this recipe irresistible

This isn't just red velvet cake...it's a bakery-level experience without the bakery price tag! The crumb is moist, rich, and velvety (yes, it lives up to its name!), with just the right balance of cocoa and vanilla.

The thick, creamy, and tangy with cream cheese is drool-worthy. Piped in that signature draped style, it looks as good as it tastes! Best of all, it's easy enough for a weekday bake but impressive enough for birthdays, holidays, or whenever you want to wow your people.

Copycat Nothing Bundt Red Velvet Bundt Cake Recipe

A moist, tender red velvet Bundt cake topped with creamy, tangy frosting-just like the famous bakery favorite, but easy to make at home!

Ingredients

  • 1 box red velvet cake mix 15.25 ounces
  • 3.9 ounce box instant chocolate pudding mix
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup butter melted
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips I used mini chocolate chips.
  • For the frosting
  • 8 ounces cream cheese
  • 4 tablespoons unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla
  • 2-3 tablespoons heavy cream as needed

Instructions

  • Preheat your oven to 350°F. Generously grease and flour a Bundt pan.
  • In a large bowl, combine the cake mix, pudding mix, eggs, sour cream, melted butter, milk, and vanilla extract. Use a hand mixer and mix until smooth and creamy, about 2 minutes.

  • Fold in the chocolate chips gently. Don't overmix-let them swirl in like little treasure bits.

  • Spoon the batter evenly into the prepared Bundt pan. Bake for 45-50 minutes or until a toothpick inserted comes out clean (a little melted chocolate is okay!).

  • Let the cake cool in the pan for 10-15 minutes, then carefully flip it onto a wire rack or cake plate to cool completely.
  • To make the frosting, start with a large mixing bowl. Cream together the butter, vanilla and cream cheese. Gradually add the powdered sugar, beating until fluffy. If the frosting is too thick, add heavy cream, 1 tablespoon at a time, until it reaches a thick but pipeable consistency.

  • Transfer the frosting to a piping bag with a large round tip. Pipe thick ribbons of frosting from the top of the cake down the sides to mimic the signature nothing bundt cake look.

  • Refrigerate until ready to serve. Remove from the refrigerator 30 minutes before serving.

Notes

Optional toppings include a small handful of chocolate chips, red velvet cake crumbs, or pretty sprinkles.

    Frequently asked questions (FAQ's)

    Can I make this cake ahead of time?

    Yes! Red velvet actually improves in flavor after resting overnight. Bake, cool completely, and frost. Cover the cake and refrigerate. Remove from the refrigerator 30 minutes prior to serving.

    Do I need a Bundt pan?

    If you want the classic Nothing Bundt Cake look, then yes... BUT, this can also be baked in a 9x13 cake pan, or as a round cake using two 9-inch rounds. Enjoy!

    Deb's top tips

    Hold off on greasing your cake pan until the batter is ready to go in. If you grease it too early, it can dry out or slice down the edges and leave you with those pesky spots where the cake sticks.

    Be sure to grease every crack and crevice well, then dust lightly with flour! I've tried using cocoa powder before, but it affected the flavor of the cake, and it's just not my preference.
