    Dust off your Crock Pot for a Pulled Pork Sandwich!

    Ok...maybe some people use a crock pot more often than I do, so if you do, please excuse the dusting comment! 🙂

    Have you ever heard of Sarsaparilla? I bet if you think back to cartoons (ok...dating myself here) with Yosemite Sam and Bugs Bunny, one of them was sipping on a Sarsaparilla when they bellied up to the bar at the saloon before the big shoot out. In case you don't know, Sarsaparilla was the original root beer. Anyway, when we were visiting my Grandma, Runnings General Store is the ONLY place I've ever been able to find the original Sioux City Sarsaparilla.

    I nabbed several bottles! We drank a few, but I brought 3 bottles home. That is the best root beer I've ever had and I wanted to think of something to make with it. After putting some thought and thinking of flavors....I decided on pulled pork.  And boy howdy, is this ever good!

    It was so simple! I used a 3 lb. boneless pork shoulder roast, onion, garlic, barbecue sauce, sweet chili sauce and root beer. Oh and some salt & pepper. I tossed everything into the slow cooker, set it on high and walked away. Six hours later, I came back and it was pork perfection!

    I pulled the roast out of the crock pot (let me tell you, it fell apart it was so tender) and removed most of the fat and discarded it. I took the remaining juice and put it in a small sauce pan on the stove on medium high heat and reduced it down by half. That took about 10 minutes. Then I put the meat back in the sauce - it was soooo juicy and delicious!

    I served the pulled pork on chewy ciabatta rolls, topped with a load of sweet pickles. The pickles were great because they cut thru the richness of the meat. I think they are a must have for this dish!
