Curry Chicken Salad with Grapes
Ingredients
- 6 cups rotisserie chicken shredded
- ¼ cup red onion minced
- 1 stalk celery finely diced
- ½ cup green or red grapes quartered
- ¼ cup walnuts or cashews chopped
- ¾ cup mayonnaise
- ½ - ¾ teaspoon yellow curry powder or to taste
- 4-6 tortillas, fresh spinach, sliced tomatoes, sliced onions optional
Instructions
- Shred the rotisserie chicken. (See note below.) Add to a large mixing bowl along with remaining ingredients - onion, celery, grapes, and nuts. Stir to combine.

- Add the mayonnaise and curry powder and mix well. Test for seasoning - if needed add salt and pepper. (When using a rotisserie chicken, I haven't found additional seasoning necessary.)

- This makes an amazing wrap. Add spinach, tomatoes, onion, if desired. Fold over the ends and wrap burrito style, or enjoy as is. One of our favorite easy lunches!

For the grapes, I like to quarter them rather than leave them in larger pieces. That way you get a little pop of sweetness throughout the chicken salad, and they don't go rolling out the other end of your wrap when you take a bite! 😆
Be sure to finely mince the red onion, too. You want that little bite of onion mixed throughout the salad without getting a big chunk that takes over everything else.
If you have a few extra minutes, toast the nuts before adding them. It brings out their flavor and gives them an extra bit of crunch. Just let them cool completely before mixing them into the salad.
And definitely taste the finished chicken salad before adding salt. Rotisserie chicken is usually pretty well seasoned already, and I've found that most of the time it doesn't need any additional salt at all.
