Crockpot Chicken Cordon Bleu takes everything you love about the classic dish and turns it into an easy, creamy crockpot dinner. Tender chicken and savory ham cook in a rich Dijon sauce, then plenty of melty Swiss cheese and a buttery Ritz cracker topping finish it off. No rolling, stuffing, breading, or fussing with individual chicken breasts!

What makes this recipe irresistible
This is the kind of dinner that earns a spot in the regular rotation. It's hearty enough to satisfy a hungry family, but versatile enough to serve differently depending on what you have in the pantry.
Easy to customize: Use chicken thighs instead of breasts, swap in baby Swiss for a milder flavor, or choose whatever starch sounds good for serving.
Sauce worth saving: There's enough creamy sauce to spoon generously over noodles, rice, or mashed potatoes.
Great use for leftover ham: Have a little extra holiday ham in the fridge or freezer? Dice it up and put it to work here.
Contrasting textures: The creamy filling gets a final sprinkle of buttery Ritz crackers and Parmesan for a little crunch in every serving.

- 3 tablespoons butter melted
- 2 tablespoons parmesan cheese
- 1 tablespoon parsley minced (optional)
Instructions
- Spray a 6-quart slow cooker with nonstick cooking spray.

- Add the cubed chicken and diced ham to the slow cooker.

- Add 1½ cups of the Swiss cheese and stir until the sauce is smooth and creamy.
- Sprinkle the remaining ½ cup Swiss cheese over the top. Cover again for 5 to 10 minutes, or until the cheese has melted.

- Serve over buttered egg noodles, mashed potatoes, steamed rice, or even baked potatoes.

Frequently asked questions (FAQ's)
Absolutely. Thick-cut deli ham is easy to dice and works well in this recipe. Leftover baked ham is another great option. If you happen to have some of my Orange Marmalade Glazed Ham tucked in the fridge, it would be terrific here!
Regular Swiss or baby Swiss will both work. Baby Swiss has a milder flavor if you don't want the cheese to be quite as assertive. For the smoothest melt, shred the cheese yourself rather than using pre-shredded cheese.
Add it just before serving. The moisture trapped inside a crockpot will quickly soften the crackers, so waiting until the end keeps that buttery topping crisp.

Deb's top tips
Wait until the chicken is fully cooked before adding the Swiss and mozzarella. Stirring the cheese in at the end allows it to melt gently into the sauce, keeping your crockpot chicken cordon blue creamy rather than oily or separated.
Test kitchen notes
I tested this recipe using cubed chicken instead of whole chicken breasts because it makes serving much easier and ensures every bite has plenty of creamy sauce, ham, and cheese.
Freshly shredded cheese melts much more smoothly than pre-shredded cheese, giving the sauce a rich, velvety texture.
Rather than adding the cracker topping during cooking, sprinkle it on just before serving. Slow cookers trap moisture, and adding the topping at the end keeps those buttery Ritz crackers crisp and delicious.
