All the flavors of homemade pumpkin pie without making a crust! This Crockpot Pumpkin Pie Pudding is rich, warmly spiced, and has a soft, almost cake-like texture that's made for scooping into bowls.
Just mix everything together, pour it into your slow cooker, and let it do the work. Top it with toasted pecans and a dollop of whipped cream for an easy fall dessert that's especially handy when your oven is already working overtime during the holidays!

A must make for Thanksgiving
What's not to love about a dessert you don't have to babysit? No checking the oven or worrying about a pie crust getting too brown. And the texture is such a treat! Somewhere between creamy pumpkin pie filling and a soft cake, with toasted pecans on top for a little crunch in every bite.

Crockpot Pumpkin Pie Pudding
Equipment
- Crockpot
Ingredients
- 15 ounces pumpkin puree
- 12 ounces evaporated milk
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 3 tablespoons butter melted
- 1 tablespoon pumpkin pie spice
- ½ cup Bisquick
- ½ cup pecans toasted and chopped
Instructions
- Spray a crockpot with cooking spray or use a crockpot liner.
- In the bowl of a stand mixer (or a large mixing bowl if you're using a hand mixer), add all the ingredients except the pecans. Whisk at low-medium speed for one minute or until well combined.

- Pour pumpkin mixture into the crockpot. Before placing the lid, add a kitchen towel to the top of the crockpot. Do not allow the towel to touch the pumpkin mixture.

- Place the lid over the towel, and cook on low setting for 5 hours until the top of the pudding is set and the sides begin to pull away from the crockpot.

- Remove lid and towel, and sprinkle the toasted sprinkle pecans over the pudding. Serve warm and enjoy!

Frequently asked questions (FAQ's)
As the pudding cooks, steam collects on the underside of the lid and turns into water droplets. The towel absorbs that moisture so it doesn't drip back onto the pudding and leave the surface wet or soggy.
The edges should be firm and beginning to pull away from the sides of the crockpot. The center should have just a slight jiggle, and an instant-read thermometer inserted into the middle should register at least 160°F. Cooking times may vary depending on your slow cooker.
Absolutely! Make it a day ahead and transfer it to a shallow container to cool. Refrigerate within two hours, leaving the lid slightly ajar until the steam has dissipated, then seal tightly. Reheat individual servings in the microwave when you're ready to enjoy!

Deb's top tips
Be sure to pick up pure pumpkin puree, not pumpkin pie filling! They look almost identical on the grocery store shelf, but pie filling already contains sugar and spices, which will throw off the balance of this recipe.
