Ingredients
- 9 inch graham cracker crust
- 8 ounce package cream cheese softened
- 14 ounce can sweetened condensed milk
- ½ cup frozen limeade concentrate thawed (do not dilute)
- 1 teaspoon lime zest
- 3 ounce box cherry gelatin
- ½ cup boiling water
- 8 ounce container whipped topping thawed
- Maraschino cherries, whipped cream or additional Cool Whip and lime slices for garnish optional
Instructions
- In a small bowl, dissolve the cherry gelatin in the boiling water. Stir until completely dissolved, then let it cool for about 10 minutes (warm, not hot).

- In a large bowl, beat the cream cheese until smooth and fluffy. Next add the sweetened condensed milk, lime zest and thawed limeade concentrate. Mix until fully combined.

- Slowly pour in the cooled cherry gelatin while mixing on low speed.

- Gently fold in the whipped topping until light and creamy.

- Spoon the filling into the graham cracker crust and smooth the top.

- Refrigerate for at least 4-6 hours, or until set (overnight is even better).
