Made with spicy gingersnap cookies, a hint of molasses, and a creamy center, these bite-sized goodies are just the thing for holiday trays, cookie exchanges, or sneaking from the fridge when no one's looking.

What makes this recipe irresistible

These truffles taste like Christmas wrapped in a white chocolate shell. They've got the perfect balance of warm spice and sweetness, and that smooth, creamy texture inside is absolutely dreamy.

Plus, you only need a handful of ingredients and zero oven time-how can you beat that?

Gingersnap Truffles

These melt-in-your-mouth truffles are sweet, spicy, and dipped in white chocolate-perfect for holiday parties or homemade gifts!

Ingredients

  • 6 cups finely ground ginger snaps cookies, approximately 2 16 ounce boxes of cookies
  • 8 ounce block cream cheese room temperature
  • 2 tablespoons molasses
  • 1 tablespoon ground cinnamon
  • 16 ounces white chocolate chips
  • 1-2 tablespoons vegetable oil
  • 2-3 tablespoons holiday sprinkles optional

Instructions

  • In a food processor, grind the gingersnap cookies into fine crumbs. This may have to be done in batches. Reserve ¼ c. for garnish.
  • Transfer the cookie crumbs to a large mixing bowl, and add the softened cream cheese, molasses, and cinnamon. Mix well until a thick dough forms.

  • Line a baking sheet with parchment paper, and using a small cookie scoop (and your hands), roll the dough into 1" balls. Place the balls onto the prepared baking sheet and freeze for 15 minutes.

  • When the cookie dough has set and you're ready to dip, melt the white baking chips in a microwave-safe bowl with 1 Tbsp. vegetable oil in 30-second intervals until completely melted and smooth. If you would like a thinner consistency, stir in another tablespoon of vegetable oil.

  • Remove the dough balls from the freezer. Using a fork, dip the dough balls into the melted chocolate being sure to cover the entire area. Gently tap off the excess, and use a toothpick to gently push the truffle from the fork onto the prepared baking dish.

  • While the chocolate is still soft, immediately sprinkle a small amount of the remaining crushed ginger snap cookies and/or holiday sprinkles.

  • Freeze the truffles once more for 15 minutes to allow the chocolate to harden and set.

Notes

Storage - refrigerate cookies up to one week, freeze up to three months. Be sure to seperate the truffles with parchment paper or wax paper to keep them from sticking together. Bonus? They're even delicious straight from the freezer!

    Frequently asked questions (FAQ's)

    Can I use homemade ginger cookies in this recipe?

    You can! I use the crunchy cookies for this recipe because it's easier and makes for a firmer truffle, but using softer, homemade cookies will work also. The truffles will be less firm, but they'll be absolutely delicious too!

    After coating a few truffles, the white chocolate starts to thicken. How can I thin it out again?

    This happens because the cold dough balls lower the temperature of the melted white chocolate, but it's an easy fix. Simply return the white chocolate to the microwave for 15-30 seconds, stir well, and continue coating your truffles.

    Can I substitute the white chocolate chips with almond bark?

    Absolutely! Using almond bark is perfectly fine, and it can be substituted using the same measurements as the white chocolate. Other melting chocolates, like milk or semi-sweet chocolate, can also be used in place of the white chocolate chips.

    For the best flavor and texture, use a block of cream cheese-not the whipped kind in a tub. The block version helps the truffle mixture stay firm and creamy, giving you that rich, smooth bite every time.

        That's a great question Michelle! Molasses gives these truffles that deep, warm gingerbread flavor that makes them feel like they came from Mrs. Claus’ private stash. But if you need a swap, use 2 tablespoons of dark corn syrup with 1 packed teaspoon of dark brown sugar. Thhis will help mimic the taste of the molasses.
