What makes this recipe irresistible

This recipe starts with a cake mix. It's an easy recipe, great for a snack or holiday dessert. No need to break out your stand mixer or even a hand mixer! It's that easy!

Chocolate Chip Pumpkin Bread Recipe

An easy quick bread is packed with tons of chocolate chips, nuts and loads of pumpkin flavor. It's super moist and easy to make so delicious!

Equipment

  • 1 mixing spoon
  • 1 Large mixing bowl
  • 1 loaf pan
  • 1 cooling rack

Ingredients

  • 1 box spice cake mix
  • 1 14.5 oz. can pumpkin puree
  • 2 eggs
  • ¼ cup vegetable oil corn or canola oil
  • ¾ cup chocolate chips
  • ¾ cup chopped walnuts

Instructions

  • Preheat the oven to 350 degrees. Prepare the loaf pan by spraying it well with non-stick coating, set aside.
  • Lightly chop the nuts.
  • Add the ingredients into a large mixing bowl and mix by hand until just combined. Spoon into the prepared loaf pan.
  • Bake at 350 for 45 minutes. Insert a toothpick in the middle of the loaf to check if it is done. If you can remove it cleanly, the loaf is ready to come out of the oven. Rest on the cooling rack for 10 minutes then run a knife around the edges of the pan. Invert and allow the loaf to cool completely on the rack before slicing.

Notes

You can substitute the spice cake mix with a yellow cake with a teaspoon of pumpkin spice added to the cake mix.
For longer shelf life, wrap it in plastic and then foil. Refrigerated it will last 5-7 days. Freeze - up to 3 months.

    Of all the pumpkin goodies I make, I haven't tried pumpkin bread...I know, what is wrong with me?!
    I think the addition of chocolate chips would definitely get my granddaughter's attention. Would like to try the bread with walnuts. thinking that would make a nice addition too.

    This sounds so good! I will definitely be trying it out with some Ghirardelli chocolate chips and maybe pecans instead of walnuts or maybe try it both ways! That gives me an excuse to make two loaves! A couple of people in my family do not like walnuts, so they will get the pecan version and I'll get to try it both ways.
