This Copycat Starbucks Red Velvet Loaf recipe is a moist and tender loaf of soft and fluffy red velvet cake. It is an amazing treat to enjoy with your morning coffee or as an afternoon snack!

This recipe stands out because of its rich, velvety texture and its vibrant color. Not only does it taste incredible, but it's also extremely easy to make.

Creative variations to try

  • I like to keep things simple and just dust the top with a bit of powdered sugar or drizzle with melted chocolate. However, cream cheese frosting or a cream cheese glaze would also taste amazing on top of this moist loaf cake.
  • Love chocolate? Add a cup of mini chocolate chips to the batter for extra chocolate flavor. You can never have too much chocolate!
  • Want to add a nutty crunch? Sprinkle chopped walnuts or pecans over the top of the loaf before baking. The added texture and flavor are delicious.

#1 Mix the cake mix.

#2 Mix the swirl batter.

Frequently asked questions (FAQ's)

Is red velvet just chocolate cake?

No, red velvet is not just chocolate cake. While it does contain cocoa powder, red velvet has a unique flavor due to the combination of cocoa, buttermilk, and vinegar. This mixture creates a subtle tanginess that makes it so much better than regular chocolate cake!

Can I make these into mini loaves?

Yes, you can absolutely make these into mini loaves! Simply divide the batter evenly between mini loaf pans, being sure not to fill them more than two-thirds full to prevent overflow. Bake at the same temperature, but reduce the cooking time. Check for doneness around the 20-25 minute mark.

Deb's top tips

The most important tip I can give you for baking cakes, is to not overmix the batter. You want to mix the batter for no more than two minutes total. Overmixing can cause a dry cake.

  • Using parchment paper is not required, though it does help prevent the loaf cake from sticking and allows you to remove the entire loaf evenly. If you aren't using parchment paper, be sure to spray your loaf pan well with baking spray.
  • The size of your loaf pan will affect your cooking time. So, if you use a different sized pan, make sure that you adjust your baking time accordingly.

Copycat Starbucks Red Velvet Loaf Recipe

With it's velvety texture, cocoa-kissed flavor and beautiful red color, this loaf is great for brunch, dessert, or gifting. This easy recipe is a great alternative to a traditional red velvet cake.

Ingredients

  • 15.25 ounce box red velvet cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup sour cream
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Swirl:
  • 8 oz cream cheese softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Optional: dust the top with powdered sugar or drizzle your loaf with melted white chocolate

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.
  • In a large bowl, combine the red velvet cake mix, eggs, vegetable oil, sour cream, milk, and vanilla extract. Mix until smooth and well combined.
  • In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  • Pour about half of the red velvet batter into the prepared loaf pan. Dollop half of the cream cheese mixture on top. Repeat with the remaining batter and cream cheese mixture, swirling to create a marbled effect.
  • Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too much, tent with foil during the last 15 minutes of baking.
  • Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Sprinkle with powdered sugar or drizzle with melted white chocolate for extra indulgence. Slice and enjoy your homemade Starbucks-inspired treat!

Notes

To store leftovers

Refrigerate - Store leftover cake in an airtight container at room temperature for 2-3 days, you can also store it in the fridge for up to five days.
Freezer - Slices of this red velvet loaf cake freeze well! Wrap each piece individually in plastic wrap, then place them in a freezer bag. They will keep frozen for up to two months, but I know they won't last that long because they're too delicious.
