Lois and Clark Expedition

If you follow my Facebook page, you know my folks visited recently. We had such a great time, there were lots of laughs and tons of fun and of course….tons of great food too. Of which, I hardly cooked at all! I did make some soup one day and picnic lunches as we spent a couple of days in Yosemite. It’s always such an amazing time when we visit the National Parks. This time, we splurged and rented a home in the Park. It was relaxing, the home was nestled amongst the trees, really a perfect get away. Of course we did some touring which included lots of picture taking.

One of my favorite pictures and part of the visit was taking my folks up to Glacier Point. It boasts an amazing view of the valley and Half Dome. The views are spectacular!

Here’s a picture we snapped of my Mom (Lois) & hubby Dan (Clark) – I told them not to go outside the railing! Seriously, what were they thinking??

We’ve titled this picture the Lois and Clark Expedition! (Mom’s name is Lois and our last name is Clark, pretty witty huh? :D)  Ok….look closely … thru the magic of photoshop, my Dad put them on this ledge, they really aren’t standing there! However in previous visits my hubby has seen people sitting on that ledge – absolutely crazy!!!

Back to the blog….I could show you a million pictures of Yosemite, but I will save some for next time and like I said, I haven’t done much cooking for about two weeks (I really am going thru withdrawal!) But I still want to share an incredible soup recipe that I made for my folks while they were visiting.

Sweet Potato Soup – full of wonderful veggies, it’s a perfect meal when you want to lighten things up, get an extra serving of your veggies and well….serve some great food to your family!

Sweet Potato Soup

This amazing soup is packed with amazing “super-foods”  like sweet potatoes, kale and chick peas. It’s a delicious vegetarian soup packed full of good proteins and fabulous flavor. Easy enough to cook when you get home from work after a busy day and so delicious I know your whole family will enjoy it!

Ok…back to vacation – is there a favorite National Park that you visit? I’d love to hear about it and if you find time in your busy schedule to make this soup…I’d love to hear about that too!

    Oh my gosh! This is such a lovely adventure. I have always wanted to do it. It looks like so much fun. I like the sweet potato soup too.

    OMG, when I first looked at the picture I was like “holy cow, that’s so crazy”. Glad to hear it was photo shopped; yikes. I can’t even imagine. Your trip sounds wonderful and photos are beautiful.
