Queso Spaghetti with Chicken

Rich pasta all wrapped in a cheesy sauce! This meal is perfect for back-to-school and busy weeknight meals!

Equipment

  • 1 9x13 casserole dish

Ingredients

  • 1 pound spaghetti broken in half, cooked to al dente and drained
  • 15 ounces jar of queso
  • 10 ounce Ro Tel Diced tomatoes and green chiles
  • 12 ounces evaporated milk
  • 1 tablespoon taco seasoning
  • 2-3 cups diced cooked chicken
  • 1 cup Monterey Jack cheese shredded
  • 1 cup crushed tortilla chips I used Doritos Nachos Cheese, but Cool Ranch Doritos would be great too.

Instructions

  • Preheat the oven to 350. Spray a casserole dish with non-stick cooking spray, set aside.
  • Bring a large pot of water to boil, seasoning with a tablespoon of salt.. Add the broken spaghetti, cook until al dente. Drain and set aside.
  • While the pasta is boiling, prepare the sauce. In a large mixing bowl combine the queso, rotel, evaporated milk and taco seasoning. Mix well to combine.
  • Add the chicken and cooked noodles. Toss to combine. Spoon into the casserole dish.
  • In a small bowl, combine the crushed tortilla chips and shredded cheese. Sprinkle over the top of the casserole.
  • Bake uncovered in preheated oven for 25-30 minutes or until hot and bubbly. Serve and enjoy!
