Nothing Bundt Vanilla Cake Copycat Recipe

This easy Copycat Nothing Bundt Vanilla Cake is a classic dessert with rich vanilla flavor and signature cream cheese frosting.

Equipment

  • 1 10 cup bundt cake pan

Ingredients

  • 1 box vanilla or white cake mix
  • 3.4 ounce box instant vanilla pudding mix
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • For the Frosting
  • 8 ounces cream cheese
  • ¼ cup butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons heavy cream or milk (to thin as needed)

Instructions

  • Grease and flour a 10 cup bundt pan really well—get into every nook and cranny.
  • Mix the batter in a large bowl. Combine the cake mix, pudding mix, sour cream, milk, oil and vanilla.
  • Add eggs on at a time. Beat on medium speed for about 2–3 minutes until smooth and thick.

  • Spoon the batter evenly into the prepared bundt pan and smooth the top.

  • Bake at 350°F for 45–55 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan for 10–15 minutes, then flip it onto a wire rack to cool completely.

  • For the Frosting
  • Add the cream cheese and butter to a large mixing bowl. Using the paddle attachment, beat until smooth, light, and fluffy.

  • Add the vanilla and powdered sugar. Starting on low continue mixing to incorporate the powdered sugar, adding the cream one tablespoon at a time until it's a pipeable consistency.

  • Pipe the frosting in thick stripes over the top of the cake.

  • Refrigerate the cake. When you're ready to serve, remove it from the refrigerator about 30 minutes prior to serving. Enjoy!

Notes

Baking Tips
Use room temperature ingredients, i.e. eggs, butter, cream cheese, for a smoother batter and frosting.
