Leftover Pizza Casserole

Don't let leftover pizza go to waste! This easy overnight breakfast casserole transforms yesterday's slices into a cheesy, satisfying breakfast everyone will be talking about.

Equipment

Ingredients

  • 4-5 slices leftover pizza cut into bite-sized pieces
  • 8 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • 1 ½ cups shredded cheese mozzarella, cheddar, or a mix
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Spray a 9x13 baking dish with non-stick cooking spray.
  • Chop the pizza slices into small ½ pieces. Spread the chopped pizza pieces evenly in the baking dish.

  • In a large bowl, whisk together eggs, milk, cream (if using), garlic powder, Italian seasoning, salt, and pepper.

  • Pour the egg mixture over the pizza. Sprinkle shredded cheese evenly on top.

  • Cover it with plastic wrap and refrigerate. Let it soak overnight or at least 6 hours.
  • Remove the casserole dish from the refrigerator and allow to sit on the counter for 30 minutes prior to baking.
  • Preheat the oven to 375°F. Bake uncovered for 35–40 minutes, until the center is set and the top is golden.
  • Let it rest 5–10 minutes before slicing so it holds together nicely. Enjoy!

Notes

You're going to ask me do I really need to use heavy cream and the answer is yes. It makes all the difference in this casserole.
Don't overthink the pizza choice—almost any leftover pizza will work. Pepperoni, supreme, veggie, meat lovers, or a mix of random slices from the box all bake up beautifully.
Storage - Store leftover casserole tightly covered in the refrigerator for up to 4 days. For longer storage, bake the casserole, cool completely, then wrap well and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating individual portions in the microwave or larger portions in the oven until heated through.
