Equipment

  • 1 9x13 casserole dish

Ingredients

  • 1 large head cauliflower cut into florets - about 8 cups
  • 15 ounces Alfredo sauce
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup sour cream
  • 1 teaspoon Montreal steak seasoning
  • ½ cup crushed buttery crackers I used Cheez Its
  • 2 tablespoons melted butter for topping
  • ½ cup cooked crumbled bacon

Instructions

  • Preheat the oven to 375°F. Lightly grease a 9x13 baking dish.
  • Bring a large pot of salted water to a boil. Add cauliflower and cook for 5–6 minutes until just fork-tender. Drain really well (this matters—no watery casseroles here).
Blanched cauliflower florets in a large pot of water surrounded by casserole ingredients on a countertop.
  • In a large bowl, combine the Alfredo sauce, sour cream, cheddar cheese, Parmesan, and Montreal steak seasoning. Stir until smooth and creamy.
Shredded cheese, sour cream, mayonnaise, Parmesan cheese, and seasonings mixed together in a large glass bowl.
  • Add the cooked cauliflower to the bowl and gently toss until everything is evenly coated.

  • Spoon the mixture into the prepared baking dish and spread evenly.

  • Mix crushed crackers with melted butter and sprinkle over the top. Finish by topping with the crumbled cooked bacon.
