Ingredients

  • 3 pounds sweet potatoes
  • 4 tablespoons butter
  • ¼ cup evaporated milk
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Peel the sweet potatoes and cut them into 2-inch chunks. Place them in a large pot and cover with cold water. Add a tablespoon of salt to season the water.
  • Bring to a boil over high heat. Reduce the heat slightly and cook for 15–20 minutes, or until the sweet potatoes are fork-tender.
  • Drain well and return the sweet potatoes to the warm pot. Let them sit for 1–2 minutes to allow any excess moisture to evaporate.
  • Add the butter, evaporated milk, salt, and pepper. Using a hand mixer or potato masher, whip the potatoes until smooth and fluffy.
  • Taste and adjust the seasoning if needed. Transfer to a serving bowl and serve warm.

Notes

For extra fluffy sweet potatoes, I would use a hand mixer rather than a potato masher. Just be careful not to overmix, or they can become a little gummy.
