Million Dollar Potato Casserole Recipe

Creamy, cheesy, and loaded with bacon, this Million Dollar Potato Casserole is an easy side dish that's always a crowd favorite!

Ingredients

  • 5 pounds russet potatoes peeled and cut into chunks
  • 8 tablespoons butter softened
  • 1 cup sour cream
  • 8 ounces cream cheese softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese divided
  • 8 slices bacon cooked and crumbled
  • 4 green onions sliced

Instructions

  • Preheat the oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
  • Peel the potatoes and cut into chunks. Placed the potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork tender, about 15 to 20 minutes. Drain well and return the potatoes to the pot. Allow to steam for a couple minutes to evaporate any remaining water.
  • Add butter, sour cream, cream cheese, garlic powder, onion powder, salt, and pepper. Mash until smooth and creamy.

  • Fold in 1½ cups of the cheddar cheese, half of the bacon, and half of the green onions.

Notes

Store leftover Million Dollar Potato Casserole in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or warm larger portions in a 350°F oven until heated through.
