Storage - Cool leftovers completely, then cover tightly or store in an airtight container in the refrigerator for up to 3 days. To reheat, cover and bake at 250 degrees F for 20–25 minutes, or until heated through.
To freeze, prepare the meatloaf as directed, but do not add the mashed potatoes or toppings and do not bake. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator, then top with mashed potatoes, cheese, and bacon before baking as directed.
