30 Minute Chicken Zoodle Soup - Super easy and very nutritious. This one uses just a bit of butter and a pre-cooked chicken breast, full of veggies too.
Begin by chopping the onion, carrots and celery. Place a large heavy bottom stockpot over the stove and add the two tablespoons butter and 1 tablespoon olive oil. Add in the chopped vegetables and sliced mushrooms. Sauté for 6-8 minutes. Add the minced garlic and the spices, salt, pepper and red pepper flakes.Continue to saute for another minute or so.
Add the chicken stock. Bring to a simmer, cover and simmer for about 10 minutes. After 10 minutes, remove the lid, add in the diced chicken and zoodles to just heat thru. Remove from heat and add the fresh herbs, parsley & basil. Squeeze the fresh lemon into the soup and that's it, you're done!
