Bisquick Irish Soda Bread Recipe

Equipment

  • 1 8" pie plate

Ingredients

  • 2 cups Bisquick
  • 6 tablespoons cold butter grated
  • 1 tablespoon sugar
  • ¾ cup evaporated milk
  • ½ cup craisins or raisins (optional)

Instructions

  • If you're using raisins or craisins, measure them out and place them in a bowl of water to plump and rehydrate. Set aside.
  • Preheat the oven to 375 degrees. Spray the pie plate with nonstick cooking spray, set aside.
  • Grate the cold butter with the large side of the grater into a medium mixing bowl.
  • Add the Bisquick, sugar, and evaporated milk.
  • If you are using craisins, drain them well and pat dry with a paper towel. Add them to the bowl.
  • Using a large spoon, mix the dough until well blended. Don't worry if there are a few lumps.
  • Spoon into the prepared pie plate and bake in the preheated oven for about 30 minutes or until the bread is golden brown.
  • Remove from the oven and place on a cooling rack for 10 minutes. Then, remove it from the baking dish. Allow to cool completely before slicing.

Notes

Rehydrate the raisins or craisins in water, 7-up, sprite, or brandy to plump them up!
