Spray the inside of the crockpot with nonstick cooking spray. Set aside.
Add the two boxes of stuffing mix to a large mixing bowl. Add the chicken broth and melted butter. Mix to combine. Now add the frozen vegetables and mix those in as well. Spoon the mixture into the prepared slow cooker bowl.
Add the chicken thighs to a large bowl or a large ziplock bag. Toss with the olive oil until all the thighs are lightly coated. Sprinkle with the chicken seasoning.
Place the chicken thighs on top of the stuffing mix. Sprinkle the top of the chicken with the paprika. Secure the lid and cook on low for 8-10 hours.
